I'm a single guy that does almost all my own cooking. Mostly beans, soups, and chicken.
These pressure cookers, (at sea level) speed up the cooking times dramatically!. Also, for reheating leftovers, its great!
Last night, I found a store bought rotisserie chicken that was half eaten and 6 days old in the frig, most would throw it out. Not me! Pop it in the pressure cooker, add a little water, can of Mushroom soup, bring up to pressure (15psi) for 5 mins, damn it was good!

The newer ones don’t explode. One of their best features.
If you have an extremely well built pressure cooker you can even fry chicken or other meats in it such as chicken fried steak. Your fried meats have never been as tender and as flavorful. And they take 1/3 the time as normal frying. I will caution you though that your must have an extremely well built pressure cooker and preferably an airvent, frying in a pressure cooker can be very dangerous if done wrong due to explosions or if not properly aspirated or cooled before opening the oil can shoot out and cause fires.

I have two pressure cookers, 6 and 8 qt. The new one (8qt) came with a small cookbook. It was on sale for $26!
I learned by experimenting. Not recommended for the faint of heart.

Tried cooking lentils in a pressure cooker once. The steam release valve got plugged and it blew up all over the ceiling.

Yes. It’s a lost art. I can do a roast in 45 minutes that is fall off the bone tender, just like it cooked all day. Same thing with beef stew. I wouldn’t take a gold monkey for my pressure cooker (or my pressure caner either, for that matter).....
Me, too. My sister gave me a digital pressure cooker for Christmas and it is awsome!

My Aunt told me about eating Possums during the depression but I never had the guts to try one. I just don’t like their looks.
One of my daughters tested this, and no it didn’t blow up. However it did erupt a food spray out the safety gasket hole that reached the ceiling and sprayed a fine mist all over the kitchen until the pressure cooker cooled off enough to stop. It was much better than blowing up, but the mess was astonishing. Picture putting food juices in a paint sprayer and painting your kitchen with it and you have some idea.
Although I no longer use it I still have my mom's "Maid of Honor" pressure caner, along with the book that came with it that is chock full of recipes. It's rather dated (circa 1949) and a lot of the recipes call for using lard, but I managed to work around that.....
I thought that is what they were made for. Well anyway I have some good info now.
