Anyone else use a pressure cooker? (vanity)

I'm a single guy that does almost all my own cooking. Mostly beans, soups, and chicken.
These pressure cookers, (at sea level) speed up the cooking times dramatically!. Also, for reheating leftovers, its great!
Last night, I found a store bought rotisserie chicken that was half eaten and 6 days old in the frig, most would throw it out. Not me! Pop it in the pressure cooker, add a little water, can of Mushroom soup, bring up to pressure (15psi) for 5 mins, damn it was good!

Dry beans: hot soak one hour, drain, add cold water, bullion cube, cayenne pepper, onion power, ketchup, cumin. Bring to pressure, cook 7 mins, take off heat and put in sink of cold water to cool, done. Store in frig in the pot for a week of easy meals ;-)
Read instructions on over filling,,, DON'T!

I haven't used one for 30 years but I may go out and buy one today. I forgot about how versatile they are. These were the microwaves of the 1920’s or ‘30’s.

Try a Korned beef in one. Delicious. I do my pea beans in a pressure cooker before I bake them. Really tender.

I have found it difficult to find cook books specifically for pressure cookers. There are thousands for crock pots and slow cookers but not for pressure cookers. Anyone have any recommendations?

Now here is a tip. put the chicken in the pressure cooker and when its done roast it in the oven

Yes. Try it. We did it years ago. The kernels all pop and won't burn as the temp can be regulated.
