(GENTLE HUG AND CHASTE SMMOCH RETURNED)

Here's one.

FLANK STEAK STUFFED WITH SAUSAGE

flank steak
1 lb mild Italian sausage
pepper
1/4 cup chopped parsley
1 tbsp oil
1/4 cup red wine

Spread out the steak. Remove the sausage from the casing and spread it over the meat to within 3/4 inch of all sides. Sprinkle a generous amount of fresh ground black pepper over the sausage and then chopped parsley. Roll it up and tie it with string.

Brown the rolled meat in oil in a skillet on all sides. Add the wine, reduce the heat, cover and cook over a low flame for 1-1/2 hours. If it dries up, add water a little at a time.

Remove the meat to a platter, cut the strings and slice. Use the pan drippings to make gravy.

Doing fine. Roasted a deboned leg of lamb for Christmas. My housemate turned 89 a few weeks before Christmas. I spent New Years Eve doing opera for our Canteen. She turned in even before that. We're not party animals anymore.

Yeah, I get it!
LOL
Eat it, so as not to hurt Mom’s feelings, right?
Cause if I did, my Mom would have given me KP for a week!
P.S. I was lucky that she didn’t much like it herself!

Had steak tartare at a few Italian restaurants.

Very thin beef slices with olive oil, balsmaic vinegar (I think) and lots of garlic.

Of course, garlic....in Italy!

Have you had pizza in Italy. We had some from a street-side vendor in Florence. It was the most boring cheese pizza I had ever eaten. LOL!

Luvie has pictures of me at the last FReeper gathering in Texas in 2019. I didn't cook, though. Humblegunner did most of the cooking.
