NATIONAL LOBSTER NEWBURG DAY

National Lobster Newburg day on March 25th ushers in a celebration worthy of a sea captain. An American seafood dish, Lobster Newburg includes lobster, butter, cream, cognac, sherry, eggs, and cayenne pepper.

Delmonico's of New York debut Lobster Newburg in 1876. A sea captain by the name of Ben Wenburg developed the elegant and rich dish. After he demonstrated the recipe to restaurant manager Charles Delmonico, Chef Charles Ranhofer made refinements and they added the creation to the restaurant’s menu as Lobster a la Wenburg. It wasn't long before the dish grew in popularity.

However, an argument between Wenburg and manager Charles Delmonico caused the dish to be removed from the menu. After many requests from patrons, Delmonico's returned the dish with a new name. The entree came to be known as Lobster Newburg.

When is National Lobster Day?

When Delmonico's first opened in 1830, Brothers Giovanni and Peter transformed a small café. They created New York's first customary restaurant with cloth-covered tables and printed menus. Similar to the café's transformation, Lobster Newburg came about right around the time lobster was transforming from a poor man's food to a delicacy. You see, before the mid-1800s, people considered lobster to be fish bait or food for prisoners. Lobster hadn't been elevated to the luxury item it is today. But right around the time Captian Wenburg invented the dish, tourism by train and ship was taking off. Pair that with improved canning options (including lobster), and people were experiencing the seafood for the first time.

As dishes like Lobster Newburg, lobster tails, lobster bisque, and others found their way onto restaurant menus, the nation's love of the crustacean grew.

I happen to be getting pretty hungry right now, didn’t have breakfast yet, late for me. Then I read this. Now I’m a starving lunatic on my way to the grocery store with visions of lobster in my head. I am a lobsterholic. When my wife and I were still newlyweds back in the 70’s we both had decent jobs and racked up some vacation time. One day in October we decided to drive from Jersey to Main for a couple days to gorge ourselves on lobster, mussels, & crab. The chowder was just delicious, and everything was just caught. I think we both gained about 10 lbs.

I personally hate Lobster Newburg. Just plain steamed with butter, not Overcooked lobster with overdone cream, compounded by the fact that my high school sweetheart, now my spouse of 50+ years, would always order Lobster Newburg for everywhere restaurant dinner before every prom dance (three or four per year) and ALWAYS had an upset stomach for the rest of the evening. Sitting for virtually every dance, and of course, leaving to go home early.

I must be thick, kinda live the lobster newburg sauce🤣. Ahh, memories.

I’m not a big fan of lobster as it’s so expensive, but when I do have it I want it plain with clarified butter, maybe a little garlic added................

Yep, and about that same timeframe BEEF was too! Beef was for the masses!

Chicken, squab, pheasant, goose, duck, etc. was the meat of choice for wealthy folks................

Classic Lobster Newburg / Yield: 4 servings
Tender lobster chunks in a creamy, cognac spiked sauce served in puff pastry.

Ing 5 tbl butter 2 tbl flour 2 c half-n-half 5 lge egg yolks, lightly beaten lb cooked lobster meat, bite sized 3 tbsp cognac 1 lemon/juice/zest 1/4 tsp nutmeg 1/4 tsp k/salt 4 baked puff pastry shells

Steps Melt butter over med. Whisk in flour; cook golden 2-3 min. Slowly whisk in half-n-half to slightly thicken. Do not boil. Add a few tbl cream mixture to eggs and whisk to temper eggs. Slowly whisk egg into cream; reset heat to low, stir til smooth and creamy. Stir in lobster, cognac, l/juice/zest, nutmeg, k/salt. Serve in puff pastry shells or atop toast points. Garnish with parsley.
