Just like turtles, snakes, lizards, and crocodiles... alligator meat and jerky can be quite delicious if properly prepared. Personally, I had to give the jerky up because the sodium content in prepackaged alligator snacks have too much sodium. It is hard enough to find unsalted potato chips. Just try to find low sodium alligator jerky. It doesn't exist

These have almost twice as much sodium per ounce as salted potato chips.

Alligator is tasty, but, I am wondering, if that big an alligator is not too tough.
I would think, that huge, old alligator would not be as tasty as a younger, smaller one.
Anybody here knows more about alligator meat?
