A good meat thermometer gets you consistent results with minimum fuss.
I do most of our main course meat in my big ol' smoker/grill on our sometimes breezy back deck but haven't pitched a loser yet.
Oh, yeah. "Sometimes breezy" can mean 40-50MPH winds/gusts over 70 in my slightly screwy corner of the world. YMMV.
I am glad the tenderloin turned out real good. I presume she made up her own spices to put on it?
What a trick to pull on the kids. I bet they really got a kick out of it once they realized what was going on.

We had a sausage rope with cauliflower and broccoli. Hubby was missing ham so he broke open a 20 year old MRE of “ham”. Said it tasted more like spam. it looked odd so I passed on it.
