I am also making (and freezing) Lemony Kale Pesto and Bacon Tomato Jam and will also be 'canning' some salads that Beau can take with him back up to B'ar Camp. Season opens this upcoming Wednesday.
These salads really are terrific - used to pack them for lunch when I worked. They last a solid week in the fridge with no loss of flavor or crispness. The important thing to remember: Dressing and 'wet' ingredients go on the bottom, then your lettuce, then your shredded cheese or sunflower seeds, croutons, etc. These are terrific for using up all kinds of garden veggies, too. A wide-mouth jar works best. but any glass container with a tight lid (old mayo or pasta jar, etc.) will do. Below are wide mouth Quart sized jars.

Good morning Diana and thank you for the new thread! Good morning to you and all the other dangerous canning “radicals”.
Thursday/Friday I got the entire farm mowed (and it needed it!). I was on the mower Thursday from 1:30 until 7:30 with maybe a half hour break. After Ida cleared out Wednesday, it’s been almost fall weather - clear days, low humidity, highs around 80 with a decent breeze. The breeze dried the grass quite a bit so mowing was pleasant. Yesterday, I finished up some spots that I didn’t get to the day before - 3:30 - 6:00.
I have a list of “to do” items - trimming branches that I have to duck under when mowing, filling some holes that just about knock my kidneys loose if I forget & hit them ... a rotten step to fix & “someone” hit the shelf where all the tools are stored and knocked it off the cincerblock foundations. To fix it, I’ll have to take all the tools off, re-set the blocks, then put it all back. The garden has grown up a bit - I need to work on it for about half a day. It’s been so hot (heat index over 100 for a good week with 105-109 some days), with oppressive humidity - I did not do any garden work.
Today, we’re scrambling around cleaning up the porch & doing some other house cleaning chores. Company coming from 1-3 for some porch-sitting, conversation, & sweet tea. It’s my cousin & his wife. He survived open heart surgery in July - 35 days in the hospital due to some unforeseen issues that became apparent once the surgeon opened him up. Frankly, I did not think I’d ever see him alive again, so it will be a happy afternoon & I’m looking forward to it.

We’re finally getting a good rain here in Missouri. I’m going to plant a small bed in front of the cabin in the next few days with baby greens mix for salads.
In Southern Oregon, we got our first sub-freezing morning 9/3.
Potatoes are begging to be dug. Tomatoes are turning red. We had a fabulous cucumber year, but they seem to be about done now.
It went from 90’s and humid last Saturday to 60’s and chilly today! I am SO cold. We will not turn the heat on this early, though. The vegetable garden will slow down now. We have not had an incredible harvest this year. I think I need to do a better job fertilizing it next year. It’s easy to spray on some Miracle Grow, but I will be looking for better ways for next year.
We have two large planters on the patio with light green and burgundy coleus and pink, yellow, and orange zinnias. I have been very pleased with that mix this summer! But they are letting really leggy now and it will be time in the next week to switch them over to fall plants. I will be sad to see them go because that means summer is coming to an end.

So when you can peppers and onions along with your tomatoes, do you hot water bath can them or pressure can them?
Both peppers and onions would be low acid. Would the acidity of the tomatoes be enough to compensate?

I got almost all my tomatoes and onions pulled.
The potatoes are dying back.
The pumpkin vines are taking over what’s left of the garden like some sci fi movie. I have some of the biggest pumpkins I have ever grown.
I am looking forward to harvesting my bucket potatoes and see what kind of harvest I get and if it was worth the effort.

Is that normal for you? All indicators here in SW Wisconsin is that Fall is going to come early this season. Trees are already turning up north, which is kind of early. Our nighttime temps have dropped by 20 degrees in the past week - which is welcomed after the heat we’ve had. Nut trees have dumped just BUCKETS of nuts this season, making squirrels and chipmunks VERY happy. ;)
Further indicators are that the Midwest is in for a VERY cold, possibly record breaking winter, but more snow to the east versus all of it in MY yard. ;)

I'm telling ya, there IS something to the 'Solar Minimum' that we're currently experiencing. Bring back the Sun Spots! If you're in a predicted Cold/Dry area, make sure to mulch heavily over winter!

same here in upstate ny. currently harvesting pears, plums, charleston grey h20 melon, san marzano tomatoes, okra.
Water bath canning for 85 minutes for my ‘below 1,000 ft. sea level’ location, and will also add 2 Tbsp. lemon juice to each Quart for more acidity and a little salt for flavor. I am using yellow (lower acid) and red together, so I’ll NEED to add the lemon juice.
I want them pretty plain as I’ll be adding them to other dishes when the time comes...Pepper Steak, Chili, Soup, etc.
And I just checked my stash, and I really need my onions for more V-8 juice and Roasted Tomato Pasta Sauce, so forget the onions for now; just tomatoes and peppers for now.
