I tried fish taco once, but I preferred beef so I never cooked it. I don’t recall using mayo in anything Mexican. But that looks like it could be a good dressing for shrimp or seafood salad. I’d try it for that. Have you tried it on shrimp salad?

Thanks for your note Spirit. Always enjoy your graphics! Iโ€™ve made this soup several times for company. My modifications is I start with dry beans. Soak/ rinse overnight

I serve with cheesy cornbread n flan for dessert

Have bowl of sour cream n grated cheese to add to soup as desired

I’ll send some of our Mexican overpopulation here to Tennessee, I’ll tell them there’s a dire need for good mexican food, and to open up good restaurants!

Rusty I use this dressing for my slaw that goes with seafood tacos. Didnโ€™t make it clear

No on shrimps salad. Never made it for Jen. As she said no. I donโ€™t do flesh

That sounds good, the right spices. I’d do the shrimp with avocado and leave off the slaw.
Have you cooked or enjoy cajen food? That’s how I usually eat seafood. Cajen fettuccine, shrimp or chicken, is great! A few days ago I made salmon New Orleans, salmon in a delicious sauce and shrimp on top.

As I just posted to Dolly, I eat seafood mostly Cajun. I can cook Mexican food, but as I told CottonBall, I don’t usually use recipes, looking at it and using hands and fingers are my measuring tools.
I used to cook a few things I learned from Mexican women that lived in houses with dirt floors, but some things are so much work it wasn’t worth it to me. I did used to make chile rellanos occasionally when my parents were alive and begged for it, but they are a lot of work too. I make good rice and make it to take to gatherings occasionally.
I always wanted to learn how to cook ethnic food from people that were that ethnicity, if that makes any sense.

Chinese food is my forte. But again, I don’t measure. Everyone in my family has requested lessons at least once, but none have tried it on their own, lol. I’ve even thinking about making a video for them, maybe my DIL or granddaughter will be camerawoman.
I waitressed at the very fist Chinese restaurant here in San Angelo a few nights a week when my oldest was just a baby. I just observed the cooks as they didn’t want to share their secrets. One day I made beef/broccoli and brought to work. The owners liked it and wanted to know where I learned how to cook it. I told them just by watching them. Lol the look on their faces.

I had my first bowl of taco soup yesterday at the farm. It was similar to chili, with a big dollop of sour cream, salsa, chopped spring onion and taco pieces on the top. It was delicious!

My friend recently went to China and he is saying, the USA is decades behind in infrastructure, cleanness. China is moving very fast ahead of the USA in living standards and basic needs. Labor is much more expensive in China than in the USA.

Well that was mighty nice of America to send all of their jobs and wealth over to China for the last few decades - good to see China cleaned up and America in a state of decay in many places. It is criminal that the politicians handed their country over to China for personal gain. A pox on them all.

I believe the part about infrastructure and living standards in some parts of some cities there. But at what cost? Can’t say or do whatever you want to?
Some of our beautiful cities have gone to hades because doing drugs in the streets is OK, as is defecating in the street, robbery and assault are ok, etc. Instead of law and order, it is allowed as long as you say and do the right things.

I’m not sure I expressed that correctly. But what do you think? Where’s the line between totalitarianism and liberty?

I know you have traveled a lot, what is your opinion?

In China, totalitarianism is less than what we have here today. He was showing me some videos, amazing. Youth is more forward-looking than USA youth.

People are unable to find a plumber, welder, and other handyman job people. Now people are learning to do these jobs themselves. Elderly people will go to houses and collect packaging material so that they can be recycled. Electric scooters and cars are everywhere. Mobile phone battery chargers/renting everywhere.

We make triple batches of taco soup and then freeze it in qt sized freezer bags.

I put the chips in my bowl, then shredded cheese, then soup...then the sour cream.

So good on cold weather nights.
