There are over 38,000 Mexican restaurants across the United States. Mexican food is the most popular international cuisine in the U.S., representing 42% of all ethnic food sales. It’s represented on the menus of one in every 10 restaurants in the United States. With so many Mexican restaurants to choose from, the real question becomes how to spot authentic Mexican food.

That would be almost anything you find in a family-run restaurant in just about any part of Italy that I have visited.

Yes, we live in a small town, miles from anywhere. Do a lot of shopping on Amazon. I’m not so sure about the better prices, though.

I remember that the Owl Cafe in Albuquerque had a great green chili cheeseburger. Also, green chilies on a breakfast omelet was good, too.

‘A small town miles from anywhere’ sounds nice.

I guess it depends on what you buy, but we do pretty well. And the selection available - more often you get what you want, instead of settling for what your store may have.

You also have to factor the time it takes to ‘go out shopping’ - which, except for groceries, I just don’t enjoy anymore. Lately we’ve even had groceries delivered; it’s nice to sometimes sleep late on Saturday, read a book all day, and just go nowhere ;-)

I used to live on highway one a few miles north of the Owl Bar and Cafe in San Antonio, New Mexico. That is my New Mexico Green Chili Cheeseburger, and that’s where I drove to from Central Texas because we were close enough.

After all, what’s a day or two for a good GCCB? My kids thought I was crazy, until they tried one. Then, only half of them thought I was crazy.

Try this:

Pico, My version.

3-4 Roma Tomato (Diced small)
1/2 Onion of choice Diced small (yellow/red/sweet/white)
Minced Garlic (1 tsp or more to taste)
Fresh Cilantro Leaves chopped coarse(4-5 Tblsp)
Salt & Pepper- dash of each
Juice of 1 Lime (Lemon in a pinch)

Now the Peppers. I prefer Pequin Chiles, Green Serano or (Green to Orange) Jalepenos.

Choose the Scovill Level to suite You

Mix all in bowl and let sit for a few minutes- hours. Enjoy!
