I dont think theres any more controversial food than eggs. By and large, the reason we have been told to avoid eating eggs is because they contain cholesterol, and indeed thats true. A typical egg may contain as much as 200 mg of cholesterol. But does that mean we shouldnt eat eggs?
To answer this question, researchers in Finland conducted an extensive study in which they evaluated two parameters. First they looked at whether or not individuals developed coronary artery disease. In addition, they looked at a parameter called carotid intimal thickening. Basically this is a study, using ultrasound, that looks at the thickness of the lining of the carotid artery. The reason this is used is because it is a strong indicator of coronary artery disease if in fact there is thickening.
The research, published in the American Journal of Clinical Nutrition, followed 1,302 men, ages 42 to 60, for approximately 21 years. The results demonstrated that there was no correlation whatsoever between the consumption of eggs and risk for coronary artery disease. Further, there was no association between egg consumption and thickening of the carotid artery.
In their discussion, the researchers described how eggs are a rich source of such compounds as lutein and zeaxanthin, as well as various bioactive phospholipids. These act to reduce inflammation as well as free radical mediated damage to fats. Coronary artery disease is, in fact, a situation in which there is excess inflammation that leads to increased free radical damage of the fat cells lining the arteries.
In addition, egg consumption is associated with increase in size of both LDL and HDL particles, and this has been associated with decreased risk for coronary artery disease as well.
Finally, egg consumption has also been associated with better glucose metabolism which will obviously have a favorable effect not only on the coronary arteries, but also on the brain.
So I hope youll take a look at this report, published in a very well-respected nutritional journal. I believe you will find this information interesting and compelling, especially around breakfast time.

The type of fat in pork reflects the diet of the animal.
So, if the animal is fed coconut oil, you’re basically eating coconut oil when you eat pork. If the animal is fed sunflower oil, you’re eating sunflower oil when you eat pork.
I started getting fairly serious about reducing carbs back in February. So it was probably ten pounds in about ten weeks. I’ve always been convinced that it’s carbs, not fat, that makes you fat. I just hadn’t really put it into practice until now.
I will say that when I first switched to low carb I felt slightly out of sorts and low on energy. They talk about the “low carb flu” which typically lasts a week or two when you first switch, and I do think I experienced that to some degree.
I have a friend at work who has about a half dozen backyard chickens. He says they’re hilarious. He says sometimes he and his wife will just sit on the porch and watch them. Every now and then he’ll bring me a few eggs, which are delicious with deep orangey yolks.

Thanks — I am aware that extra protein can be converted to glucose. I’ve started lifting weights again so I figure my protein requirement is higher than average.
The yolk stigma concerns cholesterol. And whether or not the digested cholesterol impacts the effective levels in the bloodstream.

I never experienced the low carb flu, as you call it. Maybe that's because pushing 300 lbs. made me feel terrible, be short of breath and have low energy to begin with. I have lots of energy and stamina now though.
I continue to stay with the high fat, moderate proteins and low carbs way of eating because I continue to lose weight. I'm just over halfway to my goal of shedding 100 lbs. My doctor was stunned at my weight loss and the improvement in my BP and other vitals during my annual physical in January. With the high meat and fat in my diet, she was concerned about my cholesterol, but she needn't worry. It was at 106 in January. She even lowered my BP medication dosages. She was 100% behind my diet and efforts to shed the pounds. Things are looking up.

Egg yolks are a perfect food.
I am currently assisting newborn kittens, and as per my training, I know that in the absence of a mom’s milk, mammal babies benefit from a mix of whole milk with egg yolks mixed in.
It works for all mammal babies.
Works for puppies. Works for baby killer whales. Works for baby squirrels.
Yes we sit on the deck every evening and have a drink and we cook out a lot. We just watch the hens scratching around. Highly entertaining.
