Have her research afrezza. It is a mealtime parndial insulin that is inhaled. It is from sanofi. It is a game changer in how blood sugars arre managed and could help her reverse her neuropathy.

I think your uncle was probably misdiagnosed. Also he certainly didn’t cut out all sugar if he is eating fruit, processed cereals, cookies, and sweet potatoes.
Minimal to no consumption; Includes complex carbs (Bread, Cereal, Pasta); Potatoes, Corn, Rice, And Grain Products
Fruits
Ok - Consume fruit in moderation
Protein is an essential part of any good diet
Grass-fed meat and poultry, organic or naturally raised; Pastured (free range) eggs are best protein source; Safe fish such as wild Alaska Salmon and wild Atlantic cold water fish; Raw (if you can find it), organic dairy is also excellent protein source
Healthy fats and veggies form the foundation of good dietary guidelines
Healthy fats include coconuts (coconut oil), avocados, olive oil, butter and raw nuts
Along with raw organic or naturally raised vegetables (Remember, corn is a grain, and grains are foods to minimize or avoid!)
Asparagus, beets, sweet potatoes are at the top of the list of preferred veggies;

if you watch the videos you’ll find that Dr. Fung states that the issue with diabetes is TOO MUCH insulin so to give more insulin is akin to giving alcohol to an alcoholic. His premise is fasting to stop the increase of insulin for long periods of time which breaks the insulin resistance.
Or not. My doctor agreed the raw vegetables were a good idea. The only recommendation was to avoid the cereal. And he said “Diabetes is definitely beatable.”
On the cookie my uncle said “one”.
Plus he still monitors his blood sugar religiously after 40 years.
Sweet potatoes are packed with chlorogenic acid which is thought to reduce insulin resistance. So I can see why that’s in his list. I was surprised to see as many root vegetables in his list.
I had raw vegetables for lunch on Wednesday with two prosciutto wrapped cheese sticks. They definitely fill you up fast. I didn’t make it to anywhere near 7. I think I had a tomato, artichoke, carrots, 3 asparagus stalks and the cheese sticks.
Or just go to the health food store and buy a canister of Alpiste powder(canary seed milk) and mix with water and drink twice a day like we do and your sugar count will drop like a rock and you will lose weight as it flushes fat out of the system.
People who have been taking Afrezza for their meal time inuslin have seen their BASAL needs DECREASE. You read that right. Afrezza, due to the fact that it is absorbed via the lungs into arterial blood is utilized quicker than injected insulin and mimics the how a healthy and normal pancreas works. It is thought that Afrezza takes a lot of stress off of the pancreas and allows it to gain back more functionality.
The main point is that the inhaled version, a monomeric form of insulin and its quick mechanism of action is FAR superior than injected form of hexameric insulin. People on Afrezza become even more insulin sensitive to the point that many have to REDUCE their basal insulin. That’s a very good thing.

Ten years ago, when 62, I was diagnosed type II and began taking one pill. No one told me that it was beatable, but I limited carbs to 60 a day, and about 1500 calories a day. I also exercised, mainly 20 min on an exercise bike to burn off blood sugar with my leg muscles. In 4 years I lost 100 pounds and my diabetes Dr. told me I was no longer diabetic and took me off the pill. Caught me completey by surprise! I said, “You didn’t even tell me I could beat it.” He said, “You deserve the credit, you did all the exercise and diet.” I responded, “yes, but if you’d told me I could whip it, I would have tried much harder.”
Haven’t had a pill since 2009, and my A1C has been 5.5 since then. I was lucky, my blood sugar was always stable, and I never had to take insulin.
I think it’s important to know it can be whipped.

My oldest brother, 69 yrs old was diagnosed yrs ago and took pills for awhile but after awhile he had modified things enough to be told he “no longer had diabetes” and could stop taking pills.
Again, it can be managed but it isn’t really “cured”...
“managed”, yes...maybe someone can be told they no longer have to take insulin or even no longer take pills but based on things like what I’m about to reproduce:

It’s great news that you were able to beat it but the reality is there are many who can’t even if they do what you have done. For many, their genetics are such that their pancreas just stops functioning properly. You are very lucky that you made the lifestyle changes to reverse it. For those who can’t, Afrezza offers a way that mimics the body. Insulin, if taken properly, isn’t dangerous like many of the other diabetes drugs out there.
I think you’re right. I was the first in a long line of ancestors to have diabetes. When the Dr told me I had it, my first thought was, “I’ve blown a long line of genes.”
