I think your uncle was probably misdiagnosed. Also he certainly didn’t cut out all sugar if he is eating fruit, processed cereals, cookies, and sweet potatoes.
Or not. My doctor agreed the raw vegetables were a good idea. The only recommendation was to avoid the cereal. And he said “Diabetes is definitely beatable.”
On the cookie my uncle said “one”.
Plus he still monitors his blood sugar religiously after 40 years.
Sweet potatoes are packed with chlorogenic acid which is thought to reduce insulin resistance. So I can see why that’s in his list. I was surprised to see as many root vegetables in his list.
I had raw vegetables for lunch on Wednesday with two prosciutto wrapped cheese sticks. They definitely fill you up fast. I didn’t make it to anywhere near 7. I think I had a tomato, artichoke, carrots, 3 asparagus stalks and the cheese sticks.
