Home vegetable gardens appear to be booming as a result of the twin movements to eat local and pinch pennies.

At the Southeastern Flower Show in Atlanta this winter, D. Landreth Seed Co. of New Freedom, Pa., sold three to four times more seed packets than last year, says Barb Melera, president. "This is the first time I've ever heard people say, 'I can grow this more cheaply than I can buy it in the supermarket.' That's a 180-degree turn from the norm."

Roger Doiron, a gardener and fresh-food advocate from Scarborough, Maine, said he turned $85 worth of seeds into more than six months of vegetables for his family of five.

A year later, he says, the family still had "several quarts of tomato sauce, bags of mixed vegetables and ice-cube trays of pesto in the freezer; 20 heads of garlic, a five-gallon crock of sauerkraut, more homegrown hot-pepper sauce than one family could comfortably eat in a year and three sorts of squash, which we make into soups, stews and bread."

She compares the current period of market uncertainty with that of the early- to mid-20th century when the concept of victory gardens became popular.

"A lot of companies during the world wars and the Great Depression era encouraged vegetable gardening as a way of addressing layoffs, reduced wages and such," she says. "Some companies, like U.S. Steel, made gardens available at the workplace. Railroads provided easements they'd rent to employees and others for gardening."

Apricot Angel Food Fluff Cake-—with Raspberries

APRICOT ANGEL FLUFF

16 oz box angel food cake mix
1/2 tsp almond extract
1 cup apricot preserves
8 oz container frozen whipped topping, thawed
1 cup raspberries
1 apricot, sliced
GARNISH: Edible flowers, mint and chocolate curls.

Heat oven to 350 degrees. Prepare angel food cake mix according to
package directions, stir in almond extract. Divide batter among 3 parchment
paper lined round cake pans. Bake 28 min. or until cakes are golden
brown. Place pans on cooling rack. Cool cakes completely. Remove cakes
from pans, peel off paper.

Place 1 cake layer on a serving platter. Spread with 1/2 cup apricot
preserves. Top with a 2nd cake layer. Spread with remaining preserves.
Top with a 3rd cake layer. Coat top and sides of cake with whipped
topping, create swirls. Top with raspberries and apricot slices. GARNISH if
desired. MAKES 12 SERVINGS.

Vegetable Potato Bake - Walt Disney World recipe

Vegetable Potato Bake
from Sci-Fi Dine In Theater, Disney’s Hollywood
Studios

2 1/2 lbs hash brown potatoes (shredded potatoes
partially blanched)
1 lb yellow squash, sliced 1/3” thick (lengthwise)
1 lb zucchini
6 each Portobello mushroom cap, clean gills off
4 each roasted red peppers
1 1/4 lbs soy (mozzarella) cheese, grated
1 oz corn starch
2 tbsp salt and pepper
2 oz olive oil

Keeping all vegetables separated. Slice both squash
and clean mushrooms and toss with olive oil and salt
and pepper. Grill all the vegetables and place on
sheet pan to cool, this could be done one day ahead of
time.
Mix cornstarch, potatoes and salt and pepper, together
in a bowl. Get a deep sheet pan and line with
parchment paper and spray with chef coat (if this step
is missed it will not come out of the pan)
Press a 1/4 inch layer of potatoes in the bottom of
the pans and then start layering the vegetables.
Layering, yellow squash, mushrooms, red peppers, and
zucchini. In between each layer of vegetable,
sprinkle cheese (about 1/2 lb). Add the remainder of
the cheese to the potatoes and press on the top.
Bake at 350 degrees for 45 minutes to one hour and cut
into 8 servings. Top with port vinaigrette.

Au Gratin Potatoes - Walt Disney World recipe

(Cinderella’s Royal Table breakfast, Magic Kingdom)

Serves 6.

1/4 tsp garlic salt
1/4tsp white pepper
1/2 tsp salt (optional)
3 cups milk
1 cup shredded mild cheddar cheese
4 cups diced and cooked potatoes
1/2 cup flour
1/2 cup fresh and cooked bacon bits
1/2 cup diced onions
1/4 cup melted butter

Preheat oven to 350 degrees F. Dice and cook the
potatoes. Dice onions. Gather remaining ingredients.
Melt butter. Add onion and saute. Add bacon and cook
for 2 minutes. Add flour and stir to make a paste.
Cook for 5 minutes.

Add 3 cups milk. Stir until lumps are gone. Cook
mixture 10 minutes and continue stirring. Add
potatoes, cheese and seasonings. Mix until cheese is
melted.

Bake at 350 for 10 minutes.

Chili Dog Pie

Chili Dog Pie

Prepared pie crust
3 c. chili with beans
1/2 lb. hot dogs, sliced
2 c. shredded cheddar cheese

Preheat the oven to 350 degrees.

Spread half of the chili into the bottom of a 1 1/2-qt casserole dish.
Make a layer of the hot dogs over the chili. Cover with cheese and
then top with the rest of the chili. Lay the prepared crust over the
contents of the dish and poke a few slits to vent steam.

Bake for 15-25 minutes or until the crust is golden.

Breakfast Bread Pudding With Berry Sauce

Breakfast Bread Pudding With Berry Sauce

8 slices cinnamon raisin bread — cubed
2 cups skim milk
1 cup Egg Beaters Healthy Real Egg Substitute
1/4 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/2 cup maple-flavored syrup
2 tablespoons Fleischmann’s Original Margarine
1 cup sliced strawberries
1/2 cup blueberries
1 teaspoon lemon peel
1 teaspoon lemon juice

Evenly divide bread cubes between 8 greased heatproof 6-ounce custard
cups or ramekins. In medium bowl, combine milk, Egg Beaters, sugar,
vanilla and nutmeg. Evenly pour mixture over bread cubes. Place cups in
roasting pan filled with 1-inch depth hot water. Bake at 325°F for 35 to
45 minutes or until set. Let stand for 5 minutes. In small saucepan,
heat syrup and margarine until blended. Stir in fruit, lemon peel and
juice; heat through. Unmold puddings onto serving plates; serve with berry
sauce.
Makes 8 servings.

6. LUSCIOUS TROPICAL SHAKE

LUSCIOUS TROPICAL SHAKE

1 cup vanilla ice cream
3/4 cup light cream
1 can (8 1/4 oz.) crushed pineapple, undrained
1/3 cup frozen orange juice concentrate
1 banana, sliced
3 to 4 ice cubes
Toasted coconut, if desired

Blend together ice cream, cream, pineapple, frozen orange juice
concentrate, and banana. Add ice cubes one at a time until mixture is
thick and foamy. If desired, sprinkle 1/2 tsp. toasted coconut atop
each serving. Serve immediately. (Serves 6)

Good friends are hard to find, harder to leave, and impossible to
forget.

Here’s a clone recipe for the new year — it’ll be up for just one
week — to guide you through making your own version of that popular
convenience store slush that most everyone knows from the
excruciating brain squeeze that follows a big ‘ol gulp. You must have
a blender to make this clone of 7-Eleven’s Slurpee & enough room to
stick that blender into your freezer to get it nice and thick. This
recipe gets close to the original with Kool-Aid mix & a little help
from cherry extract, but you can make this drink with any flavor Kool-
Aid mix (if you decide to make some variations, don’t worry about
adding extract). This recipe makes enough to fill one of those giant-
size 32 oz cups you find at the convenience store. Now if we could
just figure out how to make those funky spoon-straws.

to stop the blender & use a long spoon to stir up the contents. If
necessary, put the blender into your freezer for 1/2-hour. This will
help thicken it up. After 1/2-hour remove blender from freezer &

Applebee’s Almond Rice Pilaf

Applebee’s Almond Rice Pilaf

Here’s a dish served on the side with some of Applebee’s entrees
(including the honey grilled salmon we cloned last week) that you can
recreate easily at home. The secret to an authentic rice pilaf is in
sauteing the uncooked rice kernels in butter first, before adding
liquid - in this case chicken stock. While the rice cooks, you have
plenty of time to chop up some celery and onions & brown the almonds.

2 1/2 T butter
1 c uncooked converted rice
2 1/4 c chicken stock
1/8 t salt
1/3 c sliced or slivered almonds
1/4 c diced celery
1/4 c diced onion
1 t dried parsley

Melt 2 T butter over medium heat in a medium saucepan. Be sure to use
a saucepan with a lid. Add 1 c uncooked converted rice & saute rice
for 3 to 5 minutes in the butter or until some of the rice begins to
turn light brown. As the rice is cooking heat chicken stock on high
in microwave for 3 to 5 minutes or until the stock begins to bubble.
When the rice begins to brown, quickly add the hot stock & salt to
the pan. Cover the pan, reduce heat to low & simmer rice for 20
minutes. As rice cooks melt remaining 1/2 T butter in a medium
skillet over medium heat. Add almonds & saute until the almonds are
golden brown. When the rice has cooked for 20 minutes, remove it from
the heat. Add almonds, celery & onion to the rice, then let it sit,
covered, for 5 minutes or until the remaining liquid is absorbed

Big Soft Pretzels

Big Soft Pretzels

Yield: 24 pretzels

1-1/4 cups warm water
1 package (1 scant tablespoon) dry active yeast
2 teaspoons sugar
3-1/2 to 4 cups flour
1-1/2 teaspoons salt
2 tablespoons oil
1 egg beaten with 1 tablespoon milk for glaze
coarse salt for topping

Place 1/4 cup water in a large bowl and sprinkle with yeast and sugar.
Stir to dissolve and let yeast proof until bubbly, about 5 to 10
minutes. Add remaining cup water, 31/2 cups of the flour, salt, and oil; stir
to combine well. Turn dough out onto a lightly floured board and knead
until smooth and elastic, adding the remaining 1/2 cup of flour as
needed to prevent sticking. Lightly grease 2 heavy baking sheets with
shortening. Divide dough into 24 pieces and roll each into a thin strip
about 10 inches long. Shape into pretzels and place on prepared baking
sheets. Cover pretzels loosely with towels and let them rest in a warm
place until puffy, about 15 minutes. Lightly brush egg-milk glaze over the
pretzels and sprinkle with salt. Bake at 425 degrees F for about 15 to
20 minutes, until lightly colored.

snacks

2 teaspoon vegetable shortening
6 oz chocolate chips
6 oz white chocolate bars
30 each large pretzels, unsalted
1 single nonpariels, multicolored

IN A SMALL SAUCE PAN, OVER LOW HEAT, STIR IN 1 TEASPOON SHORTENING AND
CHOCOLATE CHIPS UNTIL MELTED. REMOVE FROM HEAT. SET ASIDE. IN A SECOND
PAN, PLACE THE WHITE CHOCOLATE BARS AND THE REMAINING SHORTENING. STIR
UNTIL MELTED. PLACE TWO OR MORE WIRE RACKS ON COOKIE SHEETS. USING A
FORK
DIP 15 PRETZELS, ONE AT A TIME, IN EACH CHOCOLATE. PLACE ON RACKS AND
SPRINKLE WITH NONPAREILS. PLACE IN REFRIGERATOR FOR 30 MINUTES TO SET
THE
CHOCOLATE. COVER TIGHTLY IN CONTAINER.

Yield: 15 servings

14. Caramel Dipped Chocolate Covered Pretzels

Caramel Dipped Chocolate Covered Pretzels

1 tsp vegetable oil
20 Kraft caramels
2 1/2 tsp water
36 pretzel nuggets
4 oz semisweet chocolate, finely chopped, divided

Grease a cookie sheet with the vegetable oil.

Combine the caramels and the water in a saucepan and melt over low
heat stirring frequently or in a covered dish in a microwave at full
power for 1 1/2 min. Dip the pretzel nuggets a few at a time in
the caramel and remove with a fork to the greased cookie sheet.
Refrigerate until caramel is firm.

Melt 3 oz of the chocolate. Remove from heat. While the chocolate
is still hot, mix the remaining 1 oz of chocolate into the melted
chocolate in 2 additions stirring until each addition is completely
melted before adding the next. Lift the caramels from the sheet and
dip one at a time into the chocolate. Coat completely and lift with a
small fork. Shake off excess chocolate by rapping the fork on the
edge of the bowl lightly. Remove any drips from the bottom by running
the fork across the edge of the bowl. Slide the candy onto a cookie
sheet lined with parchment paper or wax paper. Allow to cool until
solid. Let chocolate set at room temperature or in the refrigerator.,

Makes 3 dozen chocolates, about 18 servings.

15. Candy Pretzel Treats

Candy Pretzel Treats

Here’s an easy recipe to have on hand for company or a party

1 bag of round pretzels (they have to be round)
1-2 bags of Hershey kisses
1 bag of M&M’s

Lay pretzels out flat on parchment paper on cookie sheet. Put one
Hershey kiss in each pretzel
Bake at 200 degrees for about 5 minutes. Take out of oven, and press
one
M&M into the center of each kiss, so that the kiss spreads to the
entire
pretzel. Let cool, and serve.

16. How to Make a Pretzel

How to Make a Pretzel

This recipe will show you how to make a soft, chewy pretzel, the kind
that
you find in the little mall shops. Eat them plain or dip them in honey
mustard or your favorite dip.

These pretzels are really quite easy to make. If you can make bread,
you can
make these pretzels. There’s an extra step: boiling the par-baked
pretzels
for two minutes. Because they don’t require a second rise, they are
actually
faster to make than most breads.

These pretzels are an attractive golden color, not the dark bronze that
we
associate with pretzels from the store. Commercially made pretzels are
dipped in lye. You can do so but lye is quite caustic and most of us
would
choose not to work with lye. You can buy food grade lye in some
pharmacies.
If you do choose to use lye, dip them in lye before boiling. (I’ve
never
used lye so I can’t give you a lot of help on that one.)

The lye adds a little stronger flavor to the pretzel than pretzels made
without lye.

2 tablespoons butter
4 to 5 cups bread flour
1 packet instant yeast
2 tablespoons sugar
1 1/2 cups milk at 110 degrees F
1 teaspoon salt
3 to 4 quarts water
2 tablespoons salt
1 egg
1 tablespoon water
coarse salt

1. Melt the butter in the microwave and set it aside to cool. With
shortening or butter, grease a large bowl for the dough.

2. Put about 1/3 of the flour in the bowl of your stand type mixer
equipped
with a dough hook. Add the yeast and sugar. Add the milk at the
indicated
temperature. With the dough hook, run the machine for thirty seconds to
mix
the water with the flour to create a slurry. Add half of the remaining
flour, the salt, and the melted butter. Begin mixing at medium speed
adding
enough of the remaining flour to form a soft dough. Mix at medium speed
for
about four minutes or until the gluten has formed and the dough is
elastic.
The dough should be soft but not too sticky. To reach the right
consistency,
you may need to dribble a little extra water (maybe one tablespoon) or
flour
as the dough is kneading. Place the dough in the prepared bowl and
cover it
to keep the dough from drying out while it rises. Let it rise until it
doubles.

3. Preheat the oven to 450 degrees F.

4. Roll the dough out into a rectangle about 12 x 12-inches. Cut the
dough
into 1/2-inch wide strips. Take each and pull them into 16-inch ropes.
Form
knots as shown. Place them on a greased baking sheet.

5. Bake the pretzels for four minutes and then remove the sheet from
the
oven. While the pretzels are baking, start the water to boiling with
the
salt added. Turn the oven temperature down to 350 degrees F.

6. Boil the pretzels, several at a time, for two minutes, turning once.
(We
find it easier to set a one-minute timer, turn the pretzels over with
tongs,
and set the timer again.) Place the pretzels on paper towels to drain.
After
they are drained, place them back on the baking sheets.

7. Mix the egg yolk and a tablespoon of water together for an egg wash.
With
a pastry brush, brush the wash on the pretzels. Sprinkle them with
coarse
salt.

8. Immediately after sprinkling salt on the pretzels, bake them for 23
to 25
minutes or until golden. (If you let the salt sit in the egg wash
before

Soft Cheddar Pretzels

* l 1/2 cups all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 teaspoon sugar
* 2 tablespoons margarine
* 1/2 cup (2 ounces) shredded mild Cheddar cheese
* 2/3 cup milk
* 1 egg, beaten
* l 1/2 teaspoons coarse salt

Combine first 4 ingredients in a medium bowl; cut in margarine with a
pastry blender until mixture resembles coarse meal. Add cheese and
milk, stirring until dry ingredients are just moistened. Turn dough out
onto a lightly floured surface and knead about 12 times.
Divide dough in half and roll each half into a 12x8-inch rectangle.
Cut dough lengthwise into eight 1-inch strips. Twist each into a pretzel
shape; brush with beaten egg and sprinkle with coarse salt. Place on
lightly greased baking sheets and bake at 400° for 15 minutes or until
golden brown. Cool pretzels for a few minutes on wire racks; serve
pretzels warm.
Makes about 16 soft pretzels.

Philly Soft Pretzels

1 tablespoon Dry yeast
1 1/4 cup Warm water
3 4 cups flour
2 teaspoon Salt
4 teaspoon Baking soda
Kosher or margarita salt

Dissolve yeast thoroughly in 1/4 cup warm water. Mix 3 cups flour and
salt
in large bowl. Add yeast with remaining 1 cup water. Add enough
additional
flour to make dough stiff. Knead 10 minutes or till dough feels
elastic.
Form into ball. Place in bowl and spread with butter. Cover with towel
and
let rise till doubled, about 45 minutes. Divide dough into 12 small
balls
and roll between hands (or on counter) to form a rope. Form into
pretzel
shapes, wetting and pinching ends firmly. Dissolve baking soda in 4
cups
water and bring to a boil. Drop pretzels, a few at a time, in water and
boil
till they float to the top, about 1 minute. Remove and drain. Place on
buttered baking sheet. Sprinkle with salt and bake at 475 for 15-20
minutes
or till golden brown. Place on rack to cool.

We have a problem, said with a laugh............

I never liked cinnamon on my apple dishes and used nutmeg on everything.

LOL, now I find out that cinnamon is good for you.

Really, I do reach for the nutmeg for anything baked, even if it wasn’t in the recipe.

And still laughing, one of my favorite dishes is, hot rice, honey, butter and lots of nutmeg.

But then I do know what you mean about likes and dislikes, but when I found out that my fathers mother, my mother and I do not really like to cook eggs, I had to laugh.

My younger sister thinks that I am strange, she was born in San Diego, so does not have the depression/Texas/Cherokee beginning that I do.

I took over the kids and cooking, the year she was born, and being the nosy me, introduced other foods into her world, than those I had started with.

How strange life is.

I am sure that I can find the natural cure for kidney stones, sooner or later.

I never got around to using the dough enhancers, except for buttermilk powder and the Lecithin.

What worries me, is the amount of preservatives in store bought baked goods, They can sit out for weeks and months and still not be moldy.

Not a surprise that we have all kinds of disease, with all the chemicals we eat today.

We will be happy to have you join in the thread.

Yes, I may also try the BBQ in the crockpot, as I will not be able to do it on the campfire from now on.

I need to look at more crockpot recipes, that is all I use in the summer.

I wonder if it will turn out that all the tomatoes with salmonella come from one source, and THAT source is using sewer water to water the plants OR they are processing them in the same place where raw meat is processed without sterilizing everything in between or some such non-sanitary practice.

That is what makes living in America so wonderful, no law says we must like ‘one’ food over another..........

But there is hope for you, as you grow older your taste will change, or at least mine did.

I do that when I can’t see and am not smart enough to stop until it passes.

After looking at it again, I am going to leave it, as the headlines are a good reminder of why we are in danger and need to stock up and be able to take care of ourselves.

Do you recall when they were urinating on the baskets of berries? Maybe 5 or 6 years ago, folks got sick and the investigation showed that the workers were urinating on the berries so they would weigh more, as they got paid by the pound.

Three years ago, it was onions and sewer water.

And I have links to check on some new Gov bulletins about terrorists and our food.

I think that we are entering a time when food will be very dear to all of us.

For several years, I have bought the 2 liter bottles of Cola at the dollar store for 50 cents per bottle.

Last week they cost 75 cents for the same bottle.

I am not at all sure how I will survive if food is going to cost double, lots of beans and rice is the only answer.

My prayers go out to the families who are having to deal with the rising costs.

But I will send you a couple hugs, on account.

Beer Bread

1 (12 oz) can/bottle beer
3 cups self-rising flour
1/4 to 1/3 cup sugar

Mix together the sugar and flour (if making cheese bread, mix a handful
of
grated cheese in here ... or add a can of diced green chilies or some
chopped
herbs or a minced jalapeno, etc). Add beer and continue to mix with a
wooden
spoon (or your hands - batter will be sticky).

Pour into 2 small greased loaf pans. Let sit for 30 minutes to rise,
then
bake at 350º (preheated oven) for 50-60 minutes (I brush the tops with
butter
and then sprinkle with garlic powder half-way through baking, and
repeat after
removing from oven...YUM).

To make self-rising flour:
For every 1 cup of flour, add 1 1/2 tsp baking powder and 1/2 tsp
salt.

NOTE: If you don’t have or use beer, you can replace it with milk,
buttermilk, even lemon-lime soda (I’ve used all 3 and each variation
produces a
different, but nice flavor).

Fraudulent Refund Notification Purportedly From The IC3

Consumers need to be aware of e-mail schemes containing various versions of fraudulent refund notifications purportedly from the IC3 and the government of the United Kingdom. The e-mails claim the refunds are being made to compensate the recipients for their losses as victims of Internet fraud.

The perpetrators of this fraud use the names of people not associated with the IC3 but give them titles in an attempt to make the e-mails appear official. The perpetrators use the IC3’s logo and the former name of the IC3, the Internet Fraud Complaint Center (IFCC), as well as the names of the Bank of England and the Metropolitan Police in the e-mails.

The e-mails promise refunds of thousands of dollars which are to be sent via bank wire transfer from the “bank of England” once the victim signs a “fund release order.” The e-mails contain warnings that failure to sign the order will place the funds on hold and a penalty will be applied.

As with most spam, the content contains elements which are evidence of fraud such as: multiple spelling errors, poor grammar, agency names, signatures of officials and titles to appear authentic, and a warning for failure to comply. In some of the e-mails, the names of the officials do not match the signatures.

Consumers always need to be alert when they receive an unsolicited e-mail. Remember: do not open unsolicited e-mail or click on any links embedded in the e-mail, as they may contain a virus or malware.
