2005 Thankgiving Recipe thread!

Here is a place to repeat all the great recipes we shared last year and some new ones.

Mashed potatoes, giblet gravy, and stuffing are, to me, the stars of the show. So, here's a recipe from my own cookbook:

OYSTER STUFFING

8 cups dried bread crumbs
1-1/2 cups chicken stock
1 pint oysters with liquor
1 10 oz. bag fresh spinach
1/2 lb bacon diced
2 medium onions diced
6 stalks celery diced
1 tsp dried thyme leaves
2 tbsps chopped fresh parsley
3 eggs
1/2 cup melted butter
1 tsp salt
1/2 tsp black pepper

1. heat chicken stock in saucepan, add oysters and liquor and cook 3 minutes.
2. Remove oysters and set aside.
3. Remove chicken/oyster stock from heat and set aside.
4. Saute' bacon until crisp.
5. Add onions and celery and saute' for 4 minutes. Remove from heat, add thyme and parsley. Let cool
6. Break eggs in large bowl and add 1/2 of the chicken/oyster stock.
7. Coarsely chop spinach.
8. Fold in bread crumbs, oysters, spinach, bacon and vegetable mix.
9. Add melted butter and remainder of oyster/chicken stock.
10. Add salt and pepper and toss gently.
11. Stuffing is now ready for the turkey.

. As for mashed potatoes, always ask if they're made with skim milk or whole milk. If it's skim, pass. Why bother? It's like buying asports car with an automatic transmission.

Bah! Whole milk is for posers. Use heavy cream.

And, here's a little something to go with #121 above:

ROASTED GARLIC MASHED POTATOES

2 lbs potatoes peeled & cut into chunks (Yukon Gold or #1 Russets)
2 tbsps roasted garlic pulp (2 heads)
2 tbsps butter
2 tbsps olive oil
2/3 cup heavy cream
1 tsp salt
1/2 tsp black pepper

1. In a large pot, boil potatoes for 15 minutes and drain.
2. Combine all ingredients and beat until smooth.
3. Serve.

Gingered Carrots

6 carrots, pared and cut into 1/2-inch slices
2 teaspoons fresh lemon juice
3/4 teaspoon salt
1/2 teaspoon ground ginger
1/8 teaspoon pepper
2 tablespoons butter
PREPARATION:

Place carrots in a buttered 1-quart casserole. Mix lemon juice with salt, ginger, and pepper; pour over carrots then dot with butter. Cover and bake at 400° for 1 hour, or until carrots are tender.

My favorite Holiday Recipe!

Oh hell, it doesn't have to be a holiday.

Red Death #2

Ingredients:
Absolut Vodka
Southern Comfort
Amaretto
Sloe gin
Triple sec
Orange juice

Mixing instructions:
Pour all the ingredients in mixing glass with ice. Shake and strain into shot glass(es).

My husband and I avoid family conflict and go to the race track.

The first few years my sons were married I cooked and no one helped or offered to have it at their place.

My husband said that's it, they can entertain themselves.

It's been great!

When I first moved away - I used to schlep home for the holidays. I would fly home, rent a car, stay at a hotel, and run around to see the family.

I quit. Now, if you want to see me - I'll be sitting on a beach somewhere or by a pool.

In fact, I used to go to a wonderful spa for years - we'd eat healthy and get some sun - a few massages and a facial and show up back to work feeling mighty fine. Less money than going home - and I'm better off for it.

Have you tried the jennie-o lean turkey roast that Martin Fierro mentioned in an earlier post?

I just want to get through the holidays without gaining weight!

I have spent the past 2 years slogging through some of life's bumps in the road....

..from dad's heart attack....
... mom's alzheimers...
... moving them both to a 'home'....
... two evacuations for hurricanes last year...
... the election--(I stood on street corners waving for the month of October last year)--
.... my first granddaughter's early birth a few weeks later.. **she's fine**....

..mom's death....
... hurricanes this year
... moving dad to another place....

..you know....life!

Carbs became my friend...

.. But carb & I parted ways recently, and I've been taking long walks and eating healthy again!

I love this thread....!!!

MASHED POTATOES

Don't have the exact recipe in front of me, but anyone who has ever fixed MP before can figure it out easily. This recipe is used in a fairly well known restaurant in Dallas.

Boil Red potatoes (skin on) in chicken stock and cloves of garlic (amount depends on how much you are fixing), for about 40 minutes.
After boiling, drain stock.
Put in real butter.
Mash potatoes with garlic still in.
Pour in half and half.
Season with Paul Proudhomes (sp???) vegitable magic, and white and black pepper.

I know, I know, not very detailed. If you want the exact recipe (that's probably not exact but more detailed than this), freepmail me. But truthfully, if you've made MP before, you can figure out the portions.
