Advice on Dehydrated Food

I would like to have some emergency food stored for whatever disaster is coming...blizzard, grid down, etc. Does anyone have any recommendations? I see numerous vendors and businesses. Thanks!

Thanks for the ping. I added my 2 cents. Not a fan of the emergency dehydrated stuff. I make my own, but did buy some bulk items from LDS, Angus Farms etc.

I was thinking today that one scenario that people don’t often think of when they hear about ‘prepping’ is pandemic.

That seems to me to be something extremely possible, and every reason to keep a few weeks or months supplies on hand.

We had the 1942-lot C-Rations too, with canned bread and Lucky Strike green label cigarettes in them. I remember thinking that we must not have been all that special if our people couldn't provide any food newer than 24 years old...

I liked most of them, though: "Beans and Balls" (Beans and meatballs), "Beef and Rocks" (beef and potatoes), "Beans and Weenies", and ham, sliced were great. "Ham and Mothers" (ham and limas) by the Blue Star Food Company was disgusting, nauseating and that company should have fined and its owners jailed for what they did to that meal. I have no idea how anyone can ruin an easy meal like ham and limas, but those cans always floated a stinking grease at the top and no amount of rinsing could remove that stink. I likewise despised ham and eggs, chopped but ate them when I got them.

When I got my two boxes from e-bay a few weeks ago, I showed my kids how we opened the cans using that little folding can opener we Marines called a "John Wayne" and the doggies called a P-38. and I showed them how you could cut a smaller can into a small stove to hold a heat tab (or a small glob of C-4) to heat your food. I showed them the accessory pack with its book of matches, small pack of Chiclets gum, salt and sugar and creamer packets, and the all-important roll of toilet paper.

Amazing what we lived with isn't it?

Dumb question, probably, but freezing ruins canned foods?

Canned foods often contain a lot of water. Freezing water expands, damaging the can. Have you never seen a frozen can of soda with the top and bottom bulging out?

I hit Safeway on Wednesdays, which is when they clean out the meat case from the big weekend stock-up. They often have stew meat, steaks and roast that “expire” that day at 50% off. I buy whatever they have that looks good and either freeze it right away or just cook it up. When I get enough to fill 6 or 8 jars, I’ll can it in beef broth. It makes even cheap cuts tender and flavorful and stores for years. It also make it very simple to whip up a quick lunch or dinner of pot roast or noodles and beef cubes with gravy.

The trick is to can things you’ll use regularly so your stock is kept fresh. Label everything and check jars for compromised lids.

I re-use the screw on rings, but always use fresh lids.

Yes. The water in it will expand and rupture the can.

Get yourself some guineas. Great for giving warnings, and I have watched them drive off cats. The eggs are great to eat, as well as the birds. You have to learn how to kill them properly tho.

I'm not sure. Probably would depend on what the food is, water content and how hard it froze.

Canned nuts would be pretty safe because of their low water content.

I would think that if the can froze and contents expanded enough to damage can it would be noticeable.

Best just to keep your supplies from freezing.

Yes, water is a concern. We had a well and I think we could get it up and running again. The problem is making sure water is pure. We also have a creek. So, water is not a problem. CLEAN water is the problem. I don’t know how to make it clean.
