APRIL 24, 16:35 ET Study Links High Carbs to Cancer By KIM GAMEL Associated Press Writer STOCKHOLM, Sweden (AP) — Potato chips, french fries and other high-carbohydrate foods contain a substance that may cause cancer, according to a study released Wednesday by Swedish food authorities. The substance, called acrylamide, forms in varying levels when carbohydrates are heated in a certain way, such as by frying potatoes or baking bread, researchers said. ``The discovery that acrylamide is formed during the preparation of food ... is new knowledge,'' Leif Busk, chief researcher at the National Food Administration, told a news conference. ``It may now be possible to explain some of the cases of cancer caused by food.'' The governmental agency, following up on research by a group of scientists at Stockholm University, studied more than 100 foods bought in Swedish stores and restaurants and determined that ``fried, oven-baked and deep-fried potato and cereal products may contain high levels of acrylamide.'' Officials with the U.S. Food and Drug Administration did not immediately comment, but food scientists in the United States urged consumers to be patient and not overreact to the Swedish study. ``I think we need to step back a little bit and wait for greater discussion of the issue and see the findings presented in more detail,'' said Carl Winter, a toxicologist at the University of California at Davis. ``The most important thing is not the presence or absence of any type of ingredient, but how much is there.'' Winter pointed out that it was unusual for such results to be released before publication in a scientific journal and said more investigation was needed. ``I would caution consumers to be a little patient here,'' he said. ``Cancer's a very scary word, but one has to understand how these tests are done.'' The Swedish agency said the findings have been submitted to unspecified international researchers and to the 15-nation European Union for consideration, but they felt the information was important enough to release now. ``I am quite sure that this is a problem everywhere and we need to do something about it,'' Busk said. The U.S. Environmental Protection Agency describes acrylamide as white, odorless, flake-like crystals that are used mainly in treating drinking water and for industrial purposes and can cause cancer in people exposed to high levels for a long period. Mary Ellen Camire, a food scientist and nutritionist at the University of Maine, was skeptical about any link to cancer and said it was important to remember that whole-grain bread and potatoes contain a lot of important nutrients. ``The risk-to-benefit ratio is hard to estimate,'' she said. ``We eat a lot of strange chemicals, but that's life. You just have to get a balance.'' Busk estimated that acrylamide could be responsible for several hundred of the 45,000 cancer cases in Sweden each year, based on experiments in which rats were fed fried food, but he declined to be more specific about the possible cancer risk. The Swedish agency did not issue new guidelines on what or how to eat, although researchers pointed out that it's always more healthy to avoid fried foods. ``Do not stop eating these foods, but beware of what you eat, eat more cooked food, more vegetables,'' said Lilianne Abramsson Zetterberg, a toxicologist with the government agency. ———— On the Net: National Food Administration, http://www.slv.se Stockholm University, http://www.su.se

Thanks for the info. Even with a cheat day, I have kept the weight off for 2 years. I feel so much better, I would never go back to the fries and refined sugar. Not worth it.

It took 10 years for the jogging to finally settle into my joints. And I had quit for a long time. I was riding a bike at 5'9" 210 with no problems. This was the same bike I used at 155. Of course, I have a padded seat now.

what a fruitcake. the ketogenic diet is suitable for only brief periods.

at least he defraud tons of morons for millions of dollars. the only means of survival man has is his mind. when he abandons logic and can no longer discern the truth via reason, he is doomed.
this explains the seeming insanity we are all seeing today. emotions are not tools of cognition.

on the other hand, we are witnessing the extinction of the dumb. atlas will shrug.

Actually I don't eat blueberry muffins at all. But olive oil tastes great on toast or bagels. In fact, I'll put some olive oil in a dish with some garlic and maybe a little cheese and will swirl bagels or breads around in that. I use olive oil on all vegetables, it is delicious on broccoli or string beans. We cook with it and put it on fish, pasta, rice and even baked potatoes.

There is a reason why obesity is low in China and other asian countries. They eat mostly rice and vegetables and meat is only as a condiment.

Well, I have a padded seat, but my tire popped.

(It wasn't set right, the innertube was potruding outside the tire a little, but I haven't got it fixed since.)

It's also a little small for me (6'3").

I got it when I was 12. It's one of the good ol' schwinn 10 speeds. I'm too sentimental to throw out or sell anything like that! LOL

I think Creatine gets a bad rep amongst the News people, but it's just a byproduct of beef. You could eat a bunch of steak every day or take creatine, the only thing is you have to drink a lot of water because what creatine does is it swells the cells in your muscle with water & that will cause some dehydration problems.

I think in general in those countries they get more exercise, less sugar, carbs are high in fiber, and lots of vegtables

Further, if you are a Gym Rat, it's the one diet you can go on, and Lose Fat, Gain Muscle, and increase stregnth, simultaneously

balls. i do it all the time by shifting to low glycemic index carbs, shifting to essential fats only, and eating clean proteins. this vs. atkins is a matter of degree. carbs and fats are both energy sources. if you take in more than you need of either it is stored as fat. as of yesterday, offseason, i weigh 228 at 5'11 and ~10% bodyfat (the budweiser, you know.) when i was in maui a couple months ago it was 222lbs and around 8.5%.

Try eating Marischo Cherries when you have the Gout, it will help the swelling & the pain. Occasionally I have a touch of the Gout when I eat shrimp or to much Alcohol, colchicine is the medication I take when i've indulged to much.

Count me in the category of people who did it the 'old-fashioned way'.

I lost 100 lbs in a year and a half. Except for fluctuations of <5 lbs, I have kept it all off. My goal is to lose another 15 by the time my daughter graduates HS on 6/5. Don't know if I'll make it, but I'm going to give it my best shot.

BTW, I feel GREAT! I choose my foods very carefully and exercise (brisk walking) 6 miles, 5-6 times/week. I will never be able to 'eat whatever I want', but I can accept that because I have come to enjoy eating healthy. It's a whole mindset.

Congratulations on your success!

there have been no adverse reports of creatine, except for one meathead who took a buttload of it for years, and had kidney probs. which is pretty dumb, bc extra creatine is peed out.

For you larger Freepers I definitely recommend riding a bike, but ride it hard or find some hills. A bike is an efficient machine and if you just sit on it and go easy you won't get any benefit. Also, get a moderately active dog, if you don't have one. That'll force you to walk a lot. I'm fortunate that I'm quite small and a natural runner. I love to run. I just got a Brittany dog and we did a 12 mile run together last weekend.

There have been several allegations about Creatine and I've seen them several times in the news bad mouthing Creatine. I don't agree with it, but last year or the year before there were several College athletes that died. I think they were Wrestlers, but wrestlers really work on their weight & they will often try to shed water weight & not take in plenty of fluids & with Creatine that is a no no.
