No mystery about it, actually. It is basic chemistry. The acid in the buttermilk and vinegar mixes with the base element, baking soda. You get the chemical reaction which makes the cake rise.

It is the same thing that happens when you make a “volcano” for a child’s science project, or when you use baking soda followed by vinegar in an attempt to clear a drain clog.

It IS a southern thing now. And that is weird because it was invented in the 1920s at the Waldorf-Astoria in New York City! And that is more yankee than I like to think about!

I have known about Red Velvet Cake for many years here in WA State. I am lazy though so I bought the box mix.

Not cross eyed is a bonus!
One of my friends used to have a Siamese that was
very vocal, and very LOUD!
He would sit in my lap and “talk.”

Kinda spooky!
He was unsold because he was SO very cross eyed!
Some private breeders would sell them for pennies
on the dollar, IF they would sign a paper
agreeing to have that kitten spayed or neutered as soon as it was old enough.

I hate when they interrupt him over and over, or they say, “What you just said isn’t true. NOW, moving on to another topic...” In other words, they call him a liar and then immediately try to change the subject so that he can’t defend himself against the accusation they just made. These liberal interviewers all do that. They are despicable.

Stateside I’ve lived in Texas, New England, Ohio, Florida, Oklahoma and extended multiple times in New York, Oregon and New Mexico

But not til I lived in North Carolina had I ever tasted yet alone heard of Red Velvet cake

Surprises along with banana sandwiches not to be outdone by cucumber sandwiches—- then there were pinto beans… like the whole meal? Pinto cheese spread, grits, greens for starters

Had to look it up, I know an acid + base = salt + H2O. And that wouldn’t normally produce a gas.

So sodium bicarbonate + acetic acid = carbonic acid, which is unstable and decomposes into water and carbon dioxide. Ah ha, there’s the gas!

So baking powder contains baking soda plus an acid in powder form, so carbon dioxde is created as soon as water is added, somehow it is also double acting so there’s an additional reaction when it is exposed to heat. I never have looked to see how that one comes about. Usually cake recipes involving baking soda don’t have vinegar in them though, an alkaline like molasses or cocoa is supposedly sufficient to cause it to rise too, or buttermilk or sour cream. hmmmm, again that vinegar is a mystery....

Spent an hour reading about the history of red velvet cake.

Velvet refers to the soft crumb of the cake, vinegar has a hand in that. Apparently, it has numerous purposes.

They are supposed to be very chatty. Ironically Winter rarely meows.

But I think she does have strabismus issues (a slight crosseyedness affecting vision but not discernable to others). She loses a laser light about 3 feet away from her, falls off of tables, chairs, etc - maybe a depth perception issue.

But that’s why I had to keep her - I have strabismus issues too, I had surgery for it 10 years ago when glasses weren’t able to correct it any more. So we have a vision bond. And I didn’t want her scared going to Connecticut, first from being very shy and also not being able to see what was going in around her. So i HAD to keep her ;)
