****Announcement****  

Starting the first week of the NFL season, we will start a contest each week for NFL picks. We will post the teams playing and you choose the teams who you feel will win. On Monday Night football games, we will also ask you to choose the final score of the game. We are doing this in the event of a tie. This will the tiebreaker. This isn't gambling! It is absolutely free. Please be sure to post your picks on the thread, Freepmail, or email. If you are going to do it on the thread, please make sure to include: MoJo2001 in the TO: section.  Also, Freepmails need to be sent to MoJo2001. (If you send it to Bob, we won't be able to find your picks. Also, don't send it to the Canteen Sports CEO. He is too lazy..oops! We mean he's too busy thinking of other "clever" contests to run in the Canteen Sports Review!)
 
A "prize" will be given on Tuesday of each week. We will also give out an actual prize at the end of the regular season. (We are cheapskates. Blame the Canteen Sports CEO for that. So? Don't get overly excited. Think shirt and that's about it!) Everyone is welcome to participate in this game. It is absolutely free and no purchases of Burkas are necessary to participate in the game.
Keep in mind, this is all or nothing. You either pick the most winners or you don't. Nothing complicated about it folks!NFL Regular Season games begin: Thursday, September 4.
The picks must be made no later than Wednesday, September 3rd. When the clock strikes midnight on the East Coast, all picks after that time will be voided out.

NFL changes we would love to see!

1. We'd love to see an NFL Commissioner whose name you could say and spell easily. How about Burka Man for commissioner?

2. We'd love to see Officiating crews that screw up obvious calls fired forever! One incompetent call is bad enough.

3. We'd love to see the ticket prices go down. After all, a family of four cannot really afford to go to any games. It's almost like paying a mortgage  just to take them to see a three and a half hour game.

4. We'd love to see the banishment of owners from the field. Daniel Snyder, Washington Redskins owner, and Jerry Jones, Dallas Cowboys, come to mind. These people are the owners and not the coaches. There is a reason why they hired coaches. They should learn to leave the coaching to the coaches. Just sign the paychecks and stay off the field.

5. We'd love to see a more effective way to use the Instant Replay without taking up too much time. Two minutes is still too long. Either you can see it or you can't!

6. We'd love to see the mascots from both teams duke it out at halftime. That would be worth the ticket price! (Almost!)

7. Or we'd love to see the owners duke it out at halftime. Al Davis, Oakland Raiders, going against Jerry Jones would really improve the overall halftime shows.

8. We'd love to see the owners, players, and league decide that they would play a game for free to thank the taxpayers that helped pay for the luxury stadiums they don't really need.

9. We'd love to takeover the DJ services for the NFL. Some of their music is old, profane, and stupid.

10. We'd love to see the elimination of the NFL's sudden death. Make it more like college. That's better.

11. We'd love to see more games in zero below weather. Make those overpaid football players really earn their money. It would be nice to see them with a dirty jersey on at some point in the game. (Hello Deion Sanders!)

12. We'd love to see less of the fans with beer bellies hanging all the way to the floor on our television screens. More photo shots of the kids. They are much cuter. Even if they are picking their noses!

13. We'd love to see the cheerleading squads duke it out. I'm sure the male fans would love it, but the female fans would appreciate a group of cheerleaders tearing into one another.

14. We'd love to banish John Madden's "pen" from showing formations during the game. We just watched the play. We don't need nor want your doodling on our TV screens.

15. We'd love to see less football "experts". We don't want to know what the player was thinking when he hit the other player. We pretty much know what he was thinking. Obviously, a player wants to win or score for his team. He isn't usually thinking about anything else on the field.

16. We'd love to see Howie Long, from Fox's NFL Show, actually look at Jillian Barbiere this year. Just once!

17. We don't want to see another player "sharing" his insights on life. We don't care. Honestly!

18. We'd love to see Bill Parcells, Dallas Cowboys head coach, smack Jerry Jones when he enters the field. Just once!

19. We'd love to see Steve Spurrier, Washington Redskins head coach, a little more humbled. Last season should have done that for him, but we are skeptical.

20. We'd love to see Jason Sehorn playing football more than making commercials or talking about his life. We don't care.

Football Essentials

Tailgating Food! Here's some recipes:


BBQ RIBS

Ingredients:

Enough ribs to feed your crowd

Canned Coca-Cola (not diet)

Your favorite BBQ Sauce

Garlic, salt, pepper, onion powder


Steps:

Place the ribs in a baking dish and pour Coca Cola in with the ribs until they are covered. Add BBQ sauce and spices.

Allow the ribs to marinate overnight.

Slow cook the ribs in the Coca Cola in an oven at 200 degrees for at least 4 hours (up to 12 will make them very tender). Make sure you cover the ribs to avoid burning them. If you're short on time, you can boil the ribs for about 2 hours.

Remove the ribs from the oven. Be careful, the meat may fall off the bone. You can refrigerate at this point if you're making the ribs for a next-day-tailgate.

Place your ribs on the grill. Brush with BBQ sauce. Sprinkle Old Bay or Cajun seasoning over the ribs if desired (or mix the spice with the sauce before brushing for the best effect).

Serve and enjoy!!


If you don't have Coke or want a different marinate, you can use BBQ sauce, vegetable oil or light olive oil, spices, and water. Be sure the ribs are covered with liquid while marinating. Cook them in the marinate.

NACHOS

Time Required: 15 minutes prep, 10 minutes cooking

Skill Required: Minimal skills needed

Ingredients:

Nacho chips

Mexican cheese, or cheddar & Monterey jack

Sliced jalapenos & black olives, fresh diced tomatoes, and shredded lettuce

Sour cream, guacamole, and salsa

One disposable tinfoil roasting pan

Optional: pre-cooked chicken strips and/or cooked taco meat or chili. For chicken, just grill a breast or two and cut it up. For taco meat, cook with butter in a skillet with Mexican or taco seasoning. For chili, a can of chili con carne will be fine. All should be warmed prior to making your nachos.


Steps:

If you want chicken breast, grill a breast and cut it into strips

If you want taco meat, brown ground beef with butter and taco or Mexican seasoning in a skillet. If this is pre-made, warm it up on the grill prior to continuing.

If you want chili, remove the label from the can and open the can (don't open it first or you'll have a hard time with the label). Put the can on the grill for a few minutes and stir it.

Place a layer of chips in the tinfoil pan

Cover with cheese, vegetables, and meat. Repeat until you have filled the pan. Don't make it too high or the middle won't cook well.

Place the pan on the grill and cover. Use a part of the grill not directly over heat. Check after a minute or two and turn the pan to prevent burning (some of the bottom chips will burn anyway)

When the cheese is melted, they're done. Remove and serve, making sour cream, guacamole, and salsa available.

 

Buffalo Wings

Time Required: Less than 1 hour

Skill Required: Minimal cooking skills needed

Wings are tough to cook on a grill, especially if you use charcoal, so it's best to precook the wings the day before, either by deep frying or broiling.

To broil, first dust the wings with salt and pepper, Cayenne (red) pepper, garlic powder, and Old Bay seasoning. Then broil them until the juice coming out of the wings is clear.

To deep fry, heat enough oil to cover the wings and cook until crisp. You might want to do them in batches, which requires less oil.

After cooking, allow the wings to cool, put them in Tupperware or a zip-lock bag, cover with barbecue sauce, and refrigerate.

At the tailgate, all you'll have to do is heat the wings over a low fire, being careful not to burn them. Brush with fresh barbecue sauce and cover generously with Old Bay. Serve with celery and bleu cheese dressing.
 

Baked Bean Casserole

Time Required: 15 minutes prep, 1 hour unsupervised cooking

Skill Required: Minimal skills needed

Ingredients:

2 large cans of baked beans (about 28 oz each)

1/2 cup brown sugar

1/2 cup ketchup

Small amount of mustard

Salt & pepper

1 small onion, sliced, diced, or chopped

Optional - 1 package of hot dogs


Steps:

Pour the beans into a crock pot or casserole dish

Add the brown sugar, ketchup, salt & pepper, and as much of the onion as needed, plus a few squirts of mustard. Add more ketchup, mustard, and brown sugar if desired.

For Franks 'n Beans, slice the hot dog into bite-sized pieces and add to the beans

Crock for one hour or bake at 375 for 30-45 minutes (until top beans are darkened). If baking, add some ketchup to the top before cooking.

Serve it up and stand back!

NFL Fans

A Guide To NFL Fans

NFL fans are not college fans. While they could love both, most NFL fans have a passion for their NFL team more than any college team. As a matter of fact, college football is merely a pre-football warm up.

NFL fans are just as avid and fanatical as any other group. The only difference is the price they will pay for their fanatical love of professional football. On average, they will pay more for a ticket price during the regular season than any other sport. (To be fair, their season is the shortest!)

NFL Fans also have rituals that must be abided by or else. If you've always eaten something before the big game, then you will continue to do so. If you've always drank a certain beverage, it will be served. In other words, there are no surprises for anyone watching the game. Seating arrangements in the family room are usually the same. It's called preconditioned seating arrangements.

NFL fans have little appreciation or respect for people that play inside the air conditioned stadiums. For professional football is played outside in front of God and spectators. If there is a blizzard, a game is still expected to play on Sunday. Who cares if there's no heat in the house? Football will get you through.

NFL fans have little use for the refs. Of course, every sports fan can agree with that. After the past few seasons in the playoffs, you can understand why. (No need to rehash the whole New England Patriots-Oakland Raiders game. Well, ask any Raiders fan and you'll get an earful.)

NFL fans have no need for luxury boxes at the stadiums. What's the point of watching the game if you aren't out in the stands whiffing the sweat off of the players? A real man/woman wouldn't want that kind of pampering. CEOs and nerds expect it, but then they aren't truly NFL fans. Are they?

NFL fans can tell you every single member of their team that has made it to the NFL Hall of Fame. If they can't, someone they know can. Who cares about when the last stock market crash was? Who cares about whether the checkbook is balanced or not? Not an NFL fan.

NFL fans are just your average, sweet, dedicated, and diehard fans out there to support their team. Surely everyone can understand that. Right?

But first, I have to go fix my "lunch" soon. (Mom went to Atlanta with my SIL and brought me some UN-nasty-stuff-cured bacon -- smoke-cured with sea salt and sugar -- THAT I CAN EAT! I'm out of lettuce, but I made some oat bran bread earlier so I can have a bacon, egg, and tomato on oatbran toast sandwich! Sounds yummy to me!) ;)

Here's a quickie, delicious recipe!

Pour an equal mix of coke and Brook's Tangy Ketchup over chicken. Cover and slow-simmer for 45 minutes, or until tender. Uncover and simmer until sauce thickens. Serve.

I have this humonga electric skillet that I've used to make this recipe, filling it with chicken wings to transport to a buffet. (I prefer thighs.)

It is sweet. You can add Ancho or some no-salt-added Chili Powder Blend, if you want to zip-zing up the flavor a tad. Freshly ground black pepper, of course. Or chopped peppers. The sauce is the base; the final flavor depends on your imagination, creativity, and sense of adventure! ;)

My prediction for the NFL. Cowboys win the NFC East. Parcells named Coach of the Year. Cowboys lose second round of the playoffs. (Hey I'm a LIFELONG Cowboys fan but I'm a realist too! LOL!)

In college my Oklahoma Sooners add yet another National Championship Trophy to their collection.
