Any good advice on books and sites about aspartame and nutrition? (no junk science please)

There are soooooo many nutrition books, and diet books on the market. It can be a bit overwhelming and confusing for a beginner like me to sort out the junk science, and voodoo gimmicks, from the well respected books, and web sites.
In the last couple of years I've been extremely tired, sleepy and fatigued for some reason. I've never really been into the nutrition thing, so I would appreciate any of your recommendations on good nutrition, and advice on the following:
1) Sodium. What's the story? How much is too much. How little is too little. Is it true that sodium causes water retention, and too much water retention is bad?
2) Aspartame. I love it in sweeteners (nutrasweek, etc.). I probably use between 100 and 200 packets a day. No joke. But I hear so many bad things about it. Is this junk science or not?
3) Water. I heard someone say you can actually drink too much water. Is this true? If so, how much is too much?
4) yams and sweet potatoes. I love them. I usually have a yam or sweet potato along with one broiled chicken breast for a meal. What are the draw backs on yams and sweet potatoes?
5) Body For Life Diet. I've lost a bit of weight on this diet, but I still lack energy. Any draw backs to this diet?
Please steer me away from the junk science and recommmend some healthy books and websites.

I am not against trying this stuff. But I hope you understand my skeoticism since there are so many products being floated out there. How did you learn about it? How do I sort out the stuff that really works from the scam stuff?

I am totally off diet coke now, and I drank it for breakfast, lunch, snack. I am talking about the 20 ozs bottles. Now, it is just water and tea, I feel better but I just had a vacation so I am not sure it is because of the rest or being off aspartame, at any rate, doubt if I drink it again.

The other day someone told me about a "B shot" (vitamin B) that I could receive from my Doctor. Have you heard of this? Any insight on this? I guess it's supposed to be fast acting.

Someone bought me some Splenda yesterday. Not bad. In factm tastes pretty good. My dad had diabetes. So far, I don't. I don't want to either. I sure hope Splenda is good in this respect:-)

Someone bought me some Splenda yesterday. Not bad. In fact, it tastes pretty good. My dad had diabetes. So far, I don't. I don't want to either. I sure hope Splenda is good in this respect:-)

I've tasted it, and it seems almost too sweet for what I'm used to. Last year, after YEARS of sweet tea, I switched to Splenda. When I went to Florida, I just got regular sweet tea for a few weeks.
I MISSED THE SPLENDA! It IS sweeter!

In your opinions, is splenda as sweet or sweeter than Nutrasweet/Equal? SWEETER. Try it; you won't EVER go back. Plus you can cook with it.

I found some multi-vitamins that have been in storage for anywhere from 2 to 5 years. I decided to begin taking them. Is this safe? How long does the potency in these vitamins last?

After I started using it, I recommended it to people in my family with diabetes.
My cousin called me and said her husband blew her out and said, "You know I can't have anything with real sugar in it."
They did the research. They love it.

Someone may have answered this already, but it's true that Diet Rite soda seems to be the only diet soft drink using Splenda. My sister swears by the stuff. All things being equal, I'd probably choose it too. But, as it is, I use aspartame all the time. Even assuming it could cause any harm, I figure at least 50 other things will kill me before aspartame ever could.

About water: It's possible to drink too much, but VERY improbable. Most drink too little (by far).
MD's recommend at least 8 8oz. glasses a day(or as someone said above 1/2 your weight in pounds in ounces) --adding an extra glass for every caffinated or alcoholic drink.
It's hard to drink this much.... as that's a full glass of just water 8+ times a day--with the requisite trips to the bathroom. Nearly impossible to drink MORE than that.
If you drink this much water, salt or other things need not be worried about (as a matter of fact, some will say INCREASE your salt intake, if you consistantly drink this much water).
I've done this and it really does help. One digests things better, you naturally don't desire as much coffee or soft drinks (or alcahol) and even the skin just seems more healthy, when one drinks this much water.
For me this is about a gallon a day--and yet MD's say that's about right. Drinking TOO much water would be nearly impossible for me.

You might also try Diet V-8 juices. They are with Splenda also and pretty tasty and how about diet Log-Cabin syrup with Splenda???
