War on Beef: Corporate censors come for the chefs

For any person — or publication — wanting to envision a more sustainable way to cook, cutting out beef is a worthwhile first step. Almost 15 percent of greenhouse gas emissions globally come from livestock (and everything involved in raising it); 61 percent of those emissions can be traced back to beef. Cows are 20 times less efficient to raise than beans and roughly three times less efficient than poultry and pork. It might not feel like much, but cutting out just a single ingredient — beef — can have an outsize impact on making a person's cooking more environmentally friendly.

Today Epicurious announces that we've done just that: We've cut out beef. Beef won't appear in new Epicurious recipes, articles, or newsletters. It will not show up on our homepage. It will be absent from our Instagram feed.

We know that some people might assume that this decision signals some sort of vendetta against cows — or the people who eat them. But this decision was not made because we hate hamburgers (we don't!). Instead, our shift is solely about sustainability, about not giving airtime to one of the world's worst climate offenders. We think of this decision as not anti-beef but rather pro-planet. [No, it's about cows —ed.]

Of course, when it comes to the planet, eschewing beef is not a silver bullet. All ruminant animals (like sheep and goats) have significant environmental costs, and there are problems with chicken, seafood, soy, and almost every other ingredient. In a food system so broken, almost no choice is perfect.

Try grazing poultry or pork on dry sagebrush land.

Or planting beans there, hot dry windy rocky steep, etc.

True. Women should not eat tofu because its phytoestrogens increase the risk of breast cancer. And men should not eat tofu because soy phytoestrogen causes men to grow breasts.

I will continue to eat beef as I prefer. As well as other animals.

They can stuff it.

No, I don’t have my own Grill handy.

I only cook beef on my Weber Kettle charcoal grill. It's pretty easy. They make a little one (Smokey Joe) if you don't have much space.

I get it, but they don’t need proof. They know they can do this. They will do this. And then it will be chicken and fish and all other non-plant food, except maybe insects. And then they will work on refining the plant-based foods into products that can only be made by large corporations.

I've had people ask me if I'm a vegetarian because we grow a big plot of blueberries. I laugh out loud.

I tell them, "Hale no. I raise beef cattle for a living. The beef is for the main course and the blueberries are for dessert."

Being a blueberry farmer just doesn't have the same ring to it as being a beef cattle rancher.

So screw the Bidens and the Kerrys and the AO-Cs of the world who think I'm going to stop raising steaks and hamburgers for the sustainability of the planet.

Take your Green New Deal and shove it up your kale and arugula arses.

Yes, at the end of the day these companies—their shareholders—will refocus on why they exist: Make a Profit. All of the social justice and virtue signaling is costing them money, hurting the shareholders, and hopefully that will cost these executives their jobs.

One thing about raising cattle is that you can graze them on hills that don’t make good land for farming any of the row crops. And while we are at it, why aren’t they lamenting the amount of land that is under cultivation of wine grapes? Wine is not a food yet if you drive anywhere in California you see vineyards and wineries everywhere. It is a huge waste of land. We could get rid of expensive wineries and grow beef instead.

You can bet this, along with the government wanting us to eat less beef, will cause the price to skyrocket. Beef is the new toilet paper. Let the hoarding begin!
