Some possibilities:
Statistical Noise: One day does not make a trend
Reporting Error: Could be that some mechanisms for reporting are suspended on weekends
Effective Treatment: If people are getting effective treatment (Hydroxychloroquine, perhaps) they are not getting hospitalized and dying.
