"Just another way to serve cranberry sauce. Most folks who do not care for plain cranberry sauce end up asking me for this recipe after trying my cranberry/jello salad.:)"

My family does not like cranberry sauce....jellied or whole berry...until I came across this super easy recipe...then they were putting it on top of everything...including vanilla ice cream...:)

1 - can WHOLE berry cranberries
1 - small box frozen Stouffer's Apple Harvest, defrosted in the microwave and cooled.

Dice the larger pieces of apple after they have cooled. Mix into the cranberries...chill for at least 24 hours...incredible and there are no leftovers to deal with.

Will have to get wife to try this one. She doesn’t have the same lineage, but did live with my grandmother for several months at one time.

We’ll see how much rubbed off. :)

Cranberry Apple Pie:

Into unbaked pie crust, place a layer of fresh cranberries. Cover with equal amount of sugar. Add a layer of sliced apples, sprinkle with cinnamon sugar. Add another layer of cranberries and sugar and then another layer of apples and cinnamon sugar.

Top and bake as usual for an apple pie.

Be sure to add enough sugar for the cranberries so the pie isn’t tart.

2 cans shoepeg corn drained
1- 8oz cream cheese
2 TBS butter
peppers to taste (I prefer chipotle in adobo sauce)

Mix all ingredients in crock pot and stir.

This is my girlfriend’s grandmother’s Sicilian Dressing. She was born in Sicily, moved to Brooklyn and she taught it to all her kids and grandkids, it is DELICIOUS!!

Often times better than the Turkey!

1 cup of rice, cooked
3 hard boiled eggs, diced
1 1/2 cup of bread crumbs
3 raw eggs
1 tsp. salt
1/8 tsp. pepper
1/4+ cup of olive oil
3 large onions, diced
3 slices of bacon, diced
3/4 lb. of ground beef or pork (Grandma used beef, but pork seems tastier)
1 thick (about 1/4 inch) slice of ham, diced
2 thick (about 1/4 inch) slices of Italian Genoa salami, diced
1 sprig of parsley, minced
2 stalks of celery, diced
1/4 cup of grated Parmesan cheese
1/2 cup of seedless raisins (Grandma did not use, but real good!)
Approximately 3 oz. of chicken broth (Grandma did not use, but it makes the dressing nice and moist)

1) Start cooking the rice and hard boiling the eggs while you do the steps below.

2) Mix the bread crumbs, raw eggs, salt and pepper in a large bowl. Set aside.

3) Simmer the onions in the olive oil in a skillet for about 10 minutes until soft, stirring occasionally. No need to brown them. Leaving most of the olive oil in the skillet, remove the onions and add to the bowl. Mix well.

4) In the same skillet, brown the bacon and meat (pork or beef) for about 5 minutes, separating the meat with a fork and stirring occasionally. The bacon and meat do not need to be thoroughly cooked since they will cook more later in the oven. Leaving most of the olive oil in the skillet, remove the bacon and meat and add to the bowl. Mix well.

5) In the same skillet, add the ham, salami, parsley and celery. Add some more olive oil if needed. Simmer for a few minutes, stirring occasionally, to take in the olive oil flavor and soften the celery a bit. Leaving most of the olive oil in the skillet, remove these ingredients and add to the bowl. Mix well.

6) Add the rice, hard boiled eggs, cheese and raisins to the bowl. Mix well. If the mixture seems a bit dry, or if you want moister stuffing, add some chicken broth, the amount to your liking.

7) Stuff the turkey, baking the dressing in the bird. Or put the dressing in a pan, cover with foil and bake in the oven for 45 minutes at 350 degrees. Remove the foil the last 15 minutes.

8) Mangia!!

You can use regular melted butter, but with the milk solids it will look a little milky/whitish on the pie.

“Clarified butter is butter that has been rendered to separate the milk solids and water from the butter fat. Typically it is produced by melting butter and allowing the different components to separate by density. The water evaporates, some solids float to the surface and are skimmed off, and the remainder of the milk solids sink to the bottom and are left behind when the butter fat (which would then be on top) is poured off. The components that are not butter fat are usually discarded.”

juat use a little brush to paint the top of the pie a couple of times

Happy Thanksgiving to everyone.. All is fine in the heart of Texas.. We are keeping the hearth burning, and helping to prepare for the family feast.. My boys, girls, and all of the grandkids will be here for most of the holidays.. sigh

Because you asked, We just happen to have a Squirrel recipe in our cookbook from our very 1st "Clinton Legacy Cookbook" thread.. :)

southern-fried squirrel:

clean squirrel and soak in salt water for 4 hrs in fridge
cut in parts as you would a chicken
salt, roll in flour and place in hot skillet with 1/4" of oil (lard is better but will kill you quicker than a train!)
Fry to a nice brown and serve with flour gravy and biscuits. Personally I don't cook the head, but some consider it a delicacy?

Hey Carlo,

I’m happy to hear everything’s good on your end.
We are taking my mom out to dinner on Thanksgiving Day to give her a break from the nursing home. Then, on Friday, my daughter is cooking a complete turkey meal with all the trimmings for us and a few people. She’s even baking her own apple crisp! This was HER idea.
Anyway, enjoy the day and your trip on the “Love Boat.”
We should all be thankful for what we have..we might not have it much longer!!!

It is out of this world!!

She gave dozens of Sicilian recipes to her family, like lasagna (that takes EIGHT HOURS to prepare!) pasta, meatballs, spaghetti, peppers, sausage...man, was she a good cook!

I’ve downsized my turkey this year to a Cornish game hen as it’s just the two of us.

Funny that now the Clinton years seem like the good ole days. We had some good times.
