southern-fried squirrel:
clean squirrel and soak in salt water for 4 hrs in fridge
cut in parts as you would a chicken
salt, roll in flour and place in hot skillet with 1/4" of oil (lard is better but will kill you quicker than a train!)
Fry to a nice brown and serve with flour gravy and biscuits. Personally I don't cook the head, but some consider it a delicacy?
