Potato Salad May Help the Immune System
Science Daily It has long been known that eating potatoes is good for bowel health, but new research suggests that they may also have a beneficial effect on the whole immune system. Especially if eaten cold or in a potato salad, Anne Pichon reports in Chemistry & Industry.
Spanish researchers found that growing pigs fed large quantities of raw potato starch (RPS) had a healthier bowel. Not a surprise, but they also found that RPS pigs had decreased levels of white blood cells, such as leucocytes and lymphocytes in their blood. White blood cells are produced as a result of inflammation or disease, generally when the body is challenged.
The general down-regulation of leucocytes observed by the Spanish researchers suggests an overall beneficial effect, a generally more healthy body, according to immunology expert Lena Ohman at the Department of Internal Medicine, Göteborg University, Sweden. A reduction in leucocyte levels of about 15% was observed in the RPS pigs. Lower lymphocyte levels are also indicative of reduced levels of inflammation, but according to Ohman, the observed reduction in both lymphocyte density and lymphocyte apoptosis by the Spanish researchers is surprising.
Pigs were fed RPS over 14 weeks in what is the longest study of it kind on the effect of starch on bowel health (Journal of the Science of Food and Agriculture doi:10.1002/jsfa.2835). Study leader José Francisco Pérez at the Universitat Autònoma de Barcelona, Spain, said: 'The use of raw potato starch in this experiment is designed to simulate the effects of a diet high in resistant starch' says Pérez.
Humans do not eat raw potatoes, but they do eat a lot of foods that contain resistant starch, such as cold boiled potatoes, legumes, grains, green bananas, pasta and cereals About 10% of the starch eaten by human is resistant starch - starch that is not digested in the small intestine and so is shunted into the large intestine where it ferments.
Starch consumption is thought to reduce the risk of large bowel cancer and may also have an effect on irritable bowel syndrome (IBS). Ohman's team previously found that the overall lymphocyte levels do not vary for IBS patients, but that lymphocytes are transferred from the peripheral blood to the gut, which support the hypothesis of IBS being at least partially an inflammatory disorder. She says the decrease in lymphocytes observed by the Spanish is therefore interesting, and a diet of resistant starch may be worth trying in IBS patients.

As a potato farmer in NW PA, WE make the best potato salad in the land. It’s easy and very good. Don’t overcook the potatoes. Cook at low boil approximatey 15 minuted to at least “tender”. Rinse and chill immediately. Have an adequate supply of hard boiled eggs. Also, have a few qherkin pickles, some finely chopped onions, a little finely chopped fresh celery, a touch of mustard “ squeesed from the bottle” and mayo. Either real mayo or Maricle Whip. Your preference. The Maricle Whip will be a little bit sweeter. Take the hard boild eggs (peeled) and cut in half. Remove the yellow yokes and set aside. Take the whites and finely chop them into the mixture. Take the yellow yokes and crush them into a flat plate and add the squirts of mustard and mayo. Stir it all up big time till gooey. Add the gooey mixture to the other ingredients until well mixed and chill until ready to serve. BIG TIME! Same recipe can be used for Mac salad. Hope this helps. Enjoy!!!!!!
I once read that a turning point in mans evolution occured when the cooking of starchy plants was discovered and the converted starch was a more usable food. I guess I need to cook only some of the potatos when I make potato chips.

Have you had your DNA analysed? Haplogroup 'V' people have some problems with grains. Haplogroup 'V' are mainly Sa'ami (Laplanders) people. My mother was a haplogroup 'V' person.

I had to laugh at your post. I thought my husband was the only one in the world who loved raw potatoes. Every time I peel potatoes for a meal, I have to peel at least one extra for him to eat before they are cooked. He eats them like apples. He claims he ate them as a child (snuck from his parents’ garden). At sixty-five, they are still a favorite snack for him.

“Maricle Whip” (by which, I assume you mean, Miracle Whip) contains soybean oil, which is an inferior culinary product, and should be banned. It tastes like the odor of Wet Dog.
Try plain yogurt instead. Tastier, and much healthier.
Sour cream. Yum.
Sounds a lot like the potato salad my m-i-l makes. She adds a teaspoon or so of Italian dressing to the mayo (Hellmans) along with the mustard and salt and pepper. The It. dressing makes a nice difference.

I can’t digest commercial yogurt. I recently discovered KEFIR however. It is in a class by itself, even the commercial variety. It has 10 times the live culture varieties of yogurt, if the yogurt had any at all, and it can recolonize your entire digestive/immune system with the correct bacteria.
Lactose intolerant? who cares, the bacteria in KEFIR predigest it for you, no problem.
