Come on, Mojo! Quit slacking and participate, will ya? (Talk about a slacker!) Ahem! Now where were we? Oh Yeah!

This is a fun, friendly cooking contest open to anyone who would like to participate! There will be prizes! Imagine dat! First, second and third prizes, and honorable mention!

The prizes are cookbooks from Ms. B's extensive collection!

First prize: Patti Labelle's Lite Cuisine

Second prize: Greatest ever Thai Recipes

Third Prize: An appetite for Passion

Honorable mention: Pizza by James McNair

**  Winners will be announced two weeks from tonight! **  Entries can be main course, desserts, or side dishes! **  Please post your entries to this thread by midnight,        EST on Feb. 17, 2006. **  Make sure Ms.Behavin is in the "To" line of your post      to be considered for a prize!

I have baked with stevia. You have to get the very refined type it looks like really fine sugar. And *warning* a little bit goes a very long way. :) I made muffins and cakes with it...I think I still have my stevia cookbook, if you would like, I can see if I can find it online for you!

Perfect place for


White Chile
1 lb of large white beans
6 cups of chicken broth
2 minced cloves of garlic
2 medium onions chopped
1 tbs of oil
2 4oz cans of mild green chillies chopped
2 tsp cumin ground
1 1/2 tsp oregano
1/4 tsp ground cloves
1/4 more or less of Cayenne pepper
4 cups of diced cooked chicken breast
3 cups of grated Monterey Jack

serve with Salsa
Sour cream
chopped green onions

Combine beans, broth, garlic and 1/2 the onion in large soup pot.
Bring to a boil and then reduce heat.
Simmer till the beans are soft (apx 2 hrs) Add more broth if necessary.
In a skillet, saute onion in oil until tender.
Add chillies and seasoning. Add to beans, add chicken.
Simmer an additional hour.

Oh... yeah - Also, I forgot to add that Splenda is made by treating the sugar with chlorine. I don't know if that's a good thing or not, so I decided to stay away from it until we know more. *gah* Maple sugar is also pretty good for you as a sweetener.

Thanks.I had to fix a few things in the original translation,because it came out garbled.LOL.

You'll like this recipe.

There are many variations of this recipe and some times I leave out the asparagus and mushrooms.It still tastes good either way.

I found that if I boil my chicken in chicken broth instead of saltwater it is even better.:)

*squeeee* We did this one year for a movie themed chili cookoff contest. It was *SO* good. Since we chose The Matrix - we had RED Chili and BLUE Chili - we used blue potatoes and blue food coloring, and added some cream to it as well. *YUM* We got third place. But we won the next year with an African Chili that we made with venison!

Ok, I just got done with supper, and now I'm starving again! :)

Crushed red pepper in the gravy is great...especially if you've added a pound or so of hot Italian sausage as the meat base.

Mmmmmmm! I get a wonderful organic freerange chickenbroth here for about 1.50 a quart, so that's a great alternative. I'm going to pick up the ingredients this weekend and make it. Thank you again!

I like to cut the second loaf into squares and use in a spaghetti and tomato sauce recipe

How about for breakfast...with a slice of cheese melted on top and two eggs on the side?
