I like watching the Cowboy. He lost a longtime, beloved dog a few years ago; nice to know he’s dog-rich again.
(I like that little mezzaluna chopper he uses...I must have one.)
King Ranch Texas Casserole.
And Jimmah Tailrico won’t eat it not because he is vegan but because he only head stuff from the No Kings Ranch Cookbook.
Cannot even tell you how many times I’ve either made, or, have had King Ranch Casserole, over the decades.
Mostly at church pot lucks and family get togethers.
Haven’t had it in years, tho ... need a keto version 😂
It’s yummy!
It’s yummy!
Despite being named after the historic King Ranch in South Texas—one of the largest
ranches in the US—the ranch itself has no connection to the recipe, nor do its kitchens.
The dish emerged in the 1950s as convenience cooking using canned soups (Campbell’s cream of chicken soup debuted in 1947) then surged in popularity across American households.
It is widely considered a Tex-Mex adaptation of Mexican chilaquiles or a southwestern spin on traditional chicken à la king, combining shredded chicken, corn tortillas, diced tomatoes with green chiles (Ro-Tel), condensed soups, and cheddar cheese.
The recipe spread across the state through South and West Texas women’s clubs,
suppers, and regional Junior League cookbooks during the mid-20th century.
I can personally attest that King Ranch Chicken casserole is excellent - especially when you have it served at the King Ranch headquarters.
We grew up on it!
Mom (and, my aunts) made it, often .... easy peasy dinner ... always served with a side salad and/or pinto beans.
YUM!!
My wife makes the very best Chicken Casserole in the whole world....It’s her own recipe....
O, rly??
Well .... now you’re just going to have to share her recipe .... please!!
She won’t tell me...*GRIN*
Not reading the recipe, just going by the finished entre, it looks like Mexican Lasagna, if there was such a thing.
Look at the layers, the various fillings, and the golden crown of toasted, roasted cheddar cheese.
I don’t eat cheese anymore. Makes my stomach mad.
But I know how to cook with cheese for other people.
I remember how it’s supposed to look and lay like a soft orange blanket.
“King Ranch Texas Kitchen” is a popular upscale-casual steakhouse and seafood restaurant located at 1605 Post Oak Blvd in Houston, Texas. Around 4.5 out of 5 stars based on customer reviews. ($20–$60 per person). Rustic, Western-inspired, cozy, and high-energy.
Diners frequently praise the juicy ribeyes, chicken fried steak, and unique South Texas wild game options like chile-lime marinated Nilgai antelope medallions.
Popular Menu Items include the smoked brisket queso, brisket empanadas, Kingsville chicken, grilled pineapple margarita, and carrot cake or pecan crème brûlée for dessert.
Well, it’s NOT as good as a Fish Taco for supper but then, what is? ;)
I was relieved to read that there is none of that salty, yucky powdered ‘ranch’ mix in it! Yay! Looks like it would work with a pound of fried up home-grown hamburger for the meat ingredient, too. (Or ground bear or elk or moose.) Or a pound of the already-made taco-seasoned meat. And in that case it needs sweet corn. Or a drained can of red or black beans tossed into the mix.
Hmmm...
You Ladies know I can’t leave a recipe alone. Look in the Pantry & Freezer to see what’s on hand: Improvise, Adapt, Overcome. Supper. ;)

I made it once and wasn’t crazy about it, but there are so many recipes for it out there, maybe I didn’t have a good one.
A tip for those using canned cream soups in recipes: Pacific canned soups don’t have MSG or some of the other things that people may object to. (I understand that Amy’s soups are similar in that regard, but haven’t been able to find them in a long time.)
There IS a beef version of the well-known chicken dish.
