The MONTHLY Victory Garden Thread is a gathering of folks that love soil, seeds and plants of all kinds. From complete newbies that are looking to start that first potted plant, to gardeners with some acreage, to Master Gardener level and beyond, we would love to hear from you.

If you have specific question about a plant/problem you are having, please remember to state the Growing Zone where you are located.

This thread is a non-political respite. No matter what, you won’t be flamed, and the only dumb question is the one that isn’t asked.

It is impossible to hijack the Victory Garden Thread. Planting, Harvest to Table Recipes, Preserving, Good Living - there is no telling where it will go - and that is part of the fun and interest. I swear that dog knows he is posing. LOL
I tried kimchi once did a one gallon glass jar. Dear me I could not stomach it and it all went on the compost. And I grew up on homemade sauerkraut and made my own for 30+ years. Big believer in the fermented. Also still make kefir and homemade pickles. Tried kombucha for a few years when we had no raw milk. It was OK.

Still, at 90 it sounds like she had a full life worth celebrating.

She lived until 90 and it sounds like she had a full life worth celebrating.

90 is a good run. My Mom passed away peacefully at 90 y/o, too.

I pulled the kraut bucket out of the fridge earlier today to make sure there was enough liquid to keep the cabbage covered. It was close but I added a quart of brine water to be safe.

I covered the cabbage with a layer of plastic wrap and put a heavy dinner plate on top to hold it down, then brought the whole thing inside to start its six weeks of fermentation.

Middle of August it will be ready to bottle.

I always used a #6 crock which I still have. Handed down from my Dad. His Dad had made a custom wood circle with a beveled edge and a flat end enough to get your hand under. I still have it. Since I did mine in the garage all winter, I used heavy patio paver squares in plastic bags to weigh the board down. Rarely needed to add any liquid.

I should amend my reply to you to be a little more specific, esp. since the US has a background “haze” of mercury that floats here from (primarily) Chinese power plants, and often dominates mercury pollution in many otherwise “clean” waterbodies. Mind you, this mercury gets into most everything, but tends to be concentrated in predators, particularly apex predators. That said, most of us don’t eat mammalian or avian apex or near apex predators. Top or near top tier fish, however, are not so lucky (for them) ...

So, back to fish, for typical waterbodies in my region, with runoff primarily from “clean” watershed areas: I avoid consuming the piscivores likely to have accumulated toxins, and eat fish I’ve caught maybe twice a week. My wife (Filipina) makes a lot of recipes she makes with fish, primarily frozen fish, bought from (primarily) the “International” food store’s considerable frozen seafood section. Most times these recipes are heavy on, say, mung beans, and light on the amount of fish, so I, at my age, don’t worry about mercury and such in them. Being an old guy, I don’t have to worry about getting pregnant and I don’t have 50 years to accumulate low level toxins. :-)

Granted, I’d prefer having 50 years to go, if they were no worse than my current years, and then having to be more concerned with toxins, but, God is not likely to grant me that!
