When it comes to storing food, many of us follow the practices our parents and grandparents used. Who cares about reading the package instructions when Grandma left her butter in the butter bell all day, every day, right?
So, maybe your butter's home is on the counter in a dish. Or if not on the counter at all times, perhaps you leave your butter sitting out overnight to soften before baking.
But, should you leave butter sitting out, unrefrigerated? And, if so, how long can it be on the counter before it becomes unsafe to eat? We asked the experts at Land O'Lakes to put the debate to rest once and for all—and some of you might not like the answer......
Even though room-temperature butter likely won't make you sick, Land O'Lakes recommends storing butter in the fridge when you're not using it. But, if you're in the heat of baking and forget to put the last little knob back in the fridge right away, that's ok—just so long as you don't let it sit out for a few extra hours.
"Do not leave butter at room temperature for more than 4 hours," says Engen. "Always return any unused butter to the refrigerator and be aware that butter left outside refrigeration may become darker in color and have [its] flavor affected."
Keeping butter in the fridge is a good rule of thumb, as it helps ensure the tasty fat won’t pick up any undesirable odors or flavors from your kitchen. Plus, the cool fridge temps make butter last much longer because room-temperature butter can go rancid within a day or two, according to the USDA, while refrigerated or frozen butter can last months.

As long as you raise its temperature to 160F for a moment it won’t be unsafe to consume.
Heat is your friend when it comes to such questions.
I leave certain things out of the fridge regularly because I despise them cold and hard...I will just take my chances.

Same. The only time I put the butter dish back in the fridge is if I’m gonna be away for more than a few days.
I use it up so fast, there’s no problem.

We keep butter out on the counter, in a covered butter dish, for as long as it lasts. Sometimes a couple days, sometimes a couple weeks. Have had no issues with it “going bad” or rancid.
There are some good choices of butter dishes available at boscovs.com, if anyone needs any.
I keep mine in the fridge in a Butter Butler - put a stick in the gadget, crank the handle and it presses a thin ribbon out of the slot. Works great for buttering toast.
My wife introduced me to the butter bell. Love it!!!
Evidently butter didn’t exist before refrigeration.

Bacon has salt in it, cook the bacon in unsalted butter.
The amount of salt in salted butter is so small (and the amount of salt in bacon so high) that there can he no meaningful difference.

Same here. The butter was refrigerated until it was time to refill the butter dish.
Even our home churned butter got the same treatment and it wasn’t pasteurized. The butter cream came straight from the cow to the jar since our preferred method was shaking in a jar.
I’m more concerned about what’s IN the butter.
The answer is not long at my house before my 2 year old Chocolate Lab counter surfs and eats the whole stick of butter - including the wrapper.
The little punk did exactly that a couple months ago when I got the butter out early while toasting my bagel. No doubt he thought it was a tasty snack and would happily devour another stick of butter if I ever gave him the chance again......
Jeez. Never heard of it but now I want a butter bell! lol
