Türkiye Today reports that a 1,500-year-old set of four iron knives of varying sizes and a whetstone were discovered at the site of Hadrianopolis in Turkey's Black Sea region. Ersin Çelikbaş of Karabük University said that the knives and the sharpener were uncovered in the kitchen section of an area of the city known as the Bath Structure Complex. Although the knives were recovered in pieces, they have been restored and reassembled. The knives were likely used to process locally raised animals, Çelikbaş explained. Analysis of the whetstone revealed that it was sourced from a nearby quarry and shows that the quarry was in use earlier than previously known. Those look very much like they could also be stabbing knifes... So these would be duel use tools.
Not sure these were domestic kitchen knives as modern people would understand them. When meat was eaten throughout most of ancient times it was served in chunks,taken by hand and ripped apart and chewed by teeth. Good teeth were essential. In ancient Rome teeth rotted early. The Roman army marched on biscuits and bread soaked in wine or water. Also it was difficult to preseve meat in those times.

So maybe more like butcher knives?
In ancient Turkey the hand could be used like a knife, but that didn’t work on a pomegranate.
I remember a NASA astronaut put himself through school selling those things.
