Boiled and baked are not okay, at least if you want to avoid blood sugar spikes. Of course the seed oils in french fries are absolutely horrible.

Beef tallow is good, but try duck fat too- really good. Can get it from Amazon, Walmart, grocery stores. Can cook fries, hash browns, chunk crisps, waffle potatoes, etc in the oil. Tip, strain the oil after and refrigerate and use again for a few times
So with this bad press coming out about seed oils (Cotton seed, corn, soybean, canola, flaxseed, cocoanut, safflower, sunflower) does this mean that butter was maybe NOT so bad?
You cannot imagine today the barrage of “butter is bad” propaganda back in the 1940’s, when oleomargarine was first introduced. Seems that old adage (the perfect is the enemy of the good) was getting worked overtime.

You can see the sticky build up on cookie sheets and other items subjected to high heat. It’s very hard to remove - not so much with lard. I use lard when baking bread. It can’t be beat for developing the gluten.

Well, the scientists and experts (”food fascists”) have already destroyed the taste of potato chips (tastes like cardboard now) and popcorn butter via their ‘anti-trans fats campaign’. If only they would leave well enough alone and rely on people to use self-control. But noooo... they have to ruin it for everyone. Setting things up for their iron-fisted grip on our short hairs by controlling what everyone “else” is allowed to eat.
I remember a study that came out in the late 70’s or early 80’s that said people were better drivers after ONE drink.

These types of pieces are with reading only for what they fail to discuss. Eating French fries just three times a week - Fried in what kind of fat? Seed oil? Tallow? How old is the oil, i.e. how much heat exposure breaking the oil down into cytotoxic and inflammatory causing aldehydes?
Who paid for this piece? Trade Group that will profit from decreased sales of fries? a USAID NGO?
I eat potatoes every day including fish & chips every Friday at Southern kitchen restaurant and they serve generous load of seasoned French fries. At home I microwave potato 90%, then peel it, chop up in small pieces and pan fry them with olive oil until brown.
At age 85 no diabetes, weight 158 lbs on 5’ 8” frame. It is not potatoes causing diabetes with me as prime example. It is lack of daily aerobic exercise and over-eating to blame.
And that song is about 45 year old at this point!
