I’m so glad they enjoyed it!! It’s kind of nice being known for your cooking or baking skills, isn’t it? I keep trying to encourage friends and family that if you’re not in a hurry, it can be a lot of fun, and good for you!
Tonight was cards night with my neighborhood ladies. I don’t ever do this, but my herbs need to be harvested, so I brought a smattering of the different ones I had, plus some tarragon and mint to make that rotisserie chicken salad with. Some women tell me they’re not good in the kitchen, but I told them this was an easy recipe if you have the ingredients, which other than the herbs, I’m sure they do. So I insisted that they each take some home, and that their husbands will be impressed with the change. I gave everyone a copy of the recipe, too.
Ever since I started cooking with fresh herbs, I’ve just fallen in love with it. It’s just like with homegrown veggies and fruit. It always tastes better than what you can get at the store. I hope I start making a few converts.
Their birthday is in October so we told them to come back for a birthday party. His favorite is carrot cake (he brought a small one from Wegmans) & I have a great carrot cake recipe from Marian Morash (of Victory Garden fame) that I can make. Now I need to find another humdinger casserole to make for that visit as well. He also loved the cinnamon apples & I will probably repeat them as a side dish for him.

My chickens free range in the back yard, but they don’t eat the weeds, just the squash and tomatoes!................
I was just thinking, maybe you could adapt Ina Garten’s Tuscan (Marry Me) chicken recipe to a casserole recipe. Add pasta of choice to make it like a casserole, have the chicken in smaller pieces.

You would have time to try it as a casserole before serving it in October for test runs. Just an idea.
I was looking at the recipe trying to figure out how to prepare it ahead of time in a way that would ‘keep’.
With a casserole, I can bake or heat it & put it in my casserole carrier which keeps it hot or very warm for 2-3 hours, so I am not cooking when people arrive.
It would be great to have a ‘Tuscan Chicken’ casserole. I have 2 extra cups of rotisserie chicken thawed .... something to ‘play’ with :-)
Yeah, play with that rotisserie chicken and see if using the other ingredients can make it work together well enough. The whole point of casseroles is that you can make them ahead and serve reheated.
Are there Tuscan Chicken casserole recipes out there in internet land? You betcha’!! Here is one with similar ingredients to the Marry Me Chicken recipe. I currently have everything on hand except the mozzarella cheese & spinach. I happen to really like ‘the recipecritic’ (stabilized whipped cream, Alfredo sauce, shrimp fried rice, etc.) .... she has a Marry Me Chicken recipe, too.

That looks amazing!! I personally would change the pasta to something besides a ziti type pasta, but that’s just me.

Finally let up on the rain.
And the garden is mostly weeded and fertilized and planted until we get back from vacation in a few weeks.

It’s raining here again in Baltimore-Washington. Hope it lets up for the President’s birthday march and fireworks this evening. But when it comes to rain, Baltimore area is like England. It can happen any day.
