I was just thinking, maybe you could adapt Ina Garten’s Tuscan (Marry Me) chicken recipe to a casserole recipe. Add pasta of choice to make it like a casserole, have the chicken in smaller pieces.

You would have time to try it as a casserole before serving it in October for test runs. Just an idea.

I was looking at the recipe trying to figure out how to prepare it ahead of time in a way that would ‘keep’.

With a casserole, I can bake or heat it & put it in my casserole carrier which keeps it hot or very warm for 2-3 hours, so I am not cooking when people arrive.

It would be great to have a ‘Tuscan Chicken’ casserole. I have 2 extra cups of rotisserie chicken thawed .... something to ‘play’ with :-)

F.F. Having this tonight. My daughter will not eat tomatoes but for some reason will eat Sun Dried Tomatos!

Mrs. Pete went to make it and was dismayed that it was all in Metric. I did a search and found this on "Delish" with English measurements.
