Should Minnesotans be allowed to consume a beaver that damages their property?
It’s the third-biggest question surrounding the animals in Minnesota, right behind the age-old question of “How much wood would a woodchuck chuck if a woodchuck could chuck wood?” and “Who eats beavers?”
A bill introduced by DFL State Senator Grant Hauschild aims to answer at least one of those questions by once again allowing Minnesotans to eat any nuisance beavers they killed.

I saw my first dead beaver on the side of highway 12 two years ago. I was driving with my kid and I saw something with reddish fir laying there. I have seen tons of road kill, deer, possum, raccoon, porcupine, skunk etc. But hadn’t seen that color fur before. We turned around got out and looked it over and touched its tail. I guess I’m glad they are back.
That’s quite a cast....Bill Burr, The Backstreet Boys, John Mayer and a bunch of unknowns.

Do you eat the mice you catch in mouse traps? Do you consume the flies you catch on flypaper? Just curious about how far you're going to push that principle. I suspect that it's just a matter of where you draw the line.
I understand that mountain men considered beaver tail to be prime eating but I'm not interested.
Beaver tail is not bad. The skeletal meat I cook and give to the dogs, they love it.
I guess I should've put a /sarc tag on it.

Squirrels are so prevalent here in S.E. Michigan, I've shot 50 in my back yard this past year. And they keep on coming....

I do the same thing. My Hmong friends take as many as they can get.

Depending upon how you cook it, beaver meat has a taste and texture like stringy pork. Muskrat is similar, but less gamey and more like poultry.
That was was I was looking for. a real answer. And I went looking earlier after I asked. And most of what I was seeing claimed it tasted like Beef stew meat, Ribeye fat is what one claimed. But I can see how it would more than likely taste like pork instead. Like you say, probably depends on how it is cooked.
But everything I saw says it is actually quite good... There was a debate in a Minnesota trapper’s forum about whether in season or out of season, I guess winter or summer? If it had a difference in taste or not depending on season. :)

I’ve got to take the time to learn how to skin and cook them. But for now, it’s easier to just dispose of them.
That is so funny! My Mom is a ‘train enthusiast’ and her back yard used to look like Disneyland with all of her tracks and fancy landscaping, tunnels, etc.
The squirrels were her Mortal Enemy. They were constantly stealing her small figurines from her little towns built along the tracks. She would trap them in Have-A-Heart traps, then spray paint their tails bright blue, and take them about 5 miles away and release them. (Everyone needs a hobby, I guess!)
She never had a blue-tailed squirrel make a return trip to her yard, LOL!
My mother was like your mother. She was unhappy with all the squirrles.
One day I was visiting her, walked by the bathroom and happened to push the door open. There she was - one foot on the toilet seat, a long gun out the window and shooting her 22. I said, “what are you doing?” She replied with a look of distain, “What the heck does it look like I’m doing? These damn squirrels.”
I replied, “OMG do you ever hit them?”

Her reply: “33 in the past year”
My reply: All of them?
Her reply: No, not all of them. There is one I don’t shoot at. He has the very short tail”
