That was was I was looking for. a real answer. And I went looking earlier after I asked. And most of what I was seeing claimed it tasted like Beef stew meat, Ribeye fat is what one claimed. But I can see how it would more than likely taste like pork instead. Like you say, probably depends on how it is cooked.

But everything I saw says it is actually quite good... There was a debate in a Minnesota trapper’s forum about whether in season or out of season, I guess winter or summer? If it had a difference in taste or not depending on season. :)

If you ever decide to harvest a dress one, be sure to steer well clear of the castor sac. It contains a concentrated scent oil called castoreum. If you nick one of those sacs, the oil will wreck the meat as well as the smell of whatever area you are dressing it in.
