In the lineup of the healthiest foods, pork fat beat out 92 other foods, including peas, red cabbage, tomatoes, mackerel, lettuce, oranges, and sweet potatoes. This might come as a shocker to many, as veggies have traditionally been seen as the healthiest choice. However, pork fat offers a nutritional profile that shouldn't be underestimated.
To get the most nutritional bang for your buck from pork fat, it's crucial to consider how the pigs were raised. According to Surrey Live, lard provides fat-soluble vitamins like vitamin D, especially if the pigs were raised outdoors. Pasture-raised pork fat tends to be healthier due to its better nutrient content.
As with any part of your diet, moderation is essential. While pork fat has many benefits, it's important not to go overboard. The saturated fats present in lard are okay in moderate amounts, but too much can have negative health effects.

It’s just not that expensive unless you own a restaurant.
Duck fat is also awesome to coat fillets before grilling. Makes the salt and pepper stick nicely. Gives a nice even char.

I lost my taste for pig having to slaughter invasive swine on the ranch.
We just pile them up with mesquite and burn them with diesel by the dozen at least monthly. Assuming we don’t just leave them where they drop.

I don’t particularly care for liver, but my parents insisted on it every now and again. You’re right though. You feel better after eating it.
Coyotes, Crows and beetles all gotta eat too- the dropped Animals certainly don’t go to waste- lots of critters benefit from the carcasses.
I would imagine that after dealing with so many though, that one would lose interest in p3ocessing them. I’ve never had wild pig- would like to try it once, but not a steady diet of it for sure.

People didn’t used to be as fat as they are today, but when they were lard was usually the reason. Or it’s the easy thing to blame — if being fat is bad and being piggish is bad, what’s worse than pig fat?

You feel better after eating liver because you’ve already eaten it and it’s already eaten and in the past rather than the future.
All the grocery stores around here sell lard, except aldi. But then, it’s Oklahoma.
