This might come as a shocker to many, as veggies have traditionally been seen as the healthiest choice. However, pork fat offers a nutritional profile that shouldn't be underestimated.
To get the most nutritional bang for your buck from pork fat, it's crucial to consider how the pigs were raised. According to Surrey Live, lard provides fat-soluble vitamins like vitamin D, especially if the pigs were raised outdoors. Pasture-raised pork fat tends to be healthier due to its better nutrient content.
As with any part of your diet, moderation is essential. While pork fat has many benefits, it's important not to go overboard. The saturated fats present in lard are okay in moderate amounts, but too much can have negative health effects.

THE ONLY ITEM TO USE WHEN “SEASONING” CAST IRON PANS
The “lean” pork you get in the groceries today just can’t compare to the fattier pigs naturally bred when I was a kid. When my mom served pork chops, I would actually volunteer to clear the table and do the dishes so I could suck every last scrap of fat off the bones on my family’s plates.
Yep. My grandma used lard for pie crust, and would make it a little salty, not sweet. So delicious with pumpkin or apple filling!
Lard packaged for Hispanic or Mexican food is called manteca. If you have any hispanic population in your area, you might be able to find it. There are lots of brands of manteca on the general marketplace.
Nah, it was beef tallow (rendered beef fat).
Mickey D’s supposedly used lard, but when I worked at Arctic Cirle, we used lard. Best fried food ever, we cooled off and strained the hot grease upon closing. Got rid of the burned fries and chicken parts. Deep fried, pressure cooked chicken.... O MAN...good stuff.
I love liver, but only freshly cooked. Once it is cooled off, we would eat sandwiches made of it, and they did not go down very easy. BITD when we wuz po fok’. We had 7 kids, my aunts kids on and off. Mom had 8 brothers and sisters, Dad had a Federal Job, he “sponsored” a lot of family to move near us, in with us, and to get jobs.
Gizzards sauted in wine and bacon grease, used to be the go to snack for Football games. Boy do I miss Bud and Alice, best inlaws ever. They also crabbed, and fished for shrimp. ALWAYS gizzards, crab, shrimp and fresh salmon. Of course before the Boldt decision. They RUINED everything.
On ruining fishing, my MIL Alice caught a 62 lb salmon to win the derby on Hood Canal in 1969 ir 70. They won a 16 ft boat. In 1980 the derby prizes were rods and reels. It was hard to catch a good sized fish, and we caught rock fish instead for fun.
Liver soaked in buttermilk, blanched in hot water till the color changes, then fry with onions and bacon.... Oooo La La
