Mickey D’s supposedly used lard, but when I worked at Arctic Cirle, we used lard. Best fried food ever, we cooled off and strained the hot grease upon closing. Got rid of the burned fries and chicken parts. Deep fried, pressure cooked chicken.... O MAN...good stuff.
Yuo can’t do better than lard- duck fat is also a must for fryign especially potatoes- crisp em good in duck fat- oh my, soem good- we are able to buy soem from walmart, but it is expensive- best is to cook a duck and keep the fat drippings, and cook small potatoes in the bottom of the pan the duck is cooked in so the fat drips down onto them while they are cookin- wow! Good stuff!
