A couple of rotisserie chickens. (Have own rotisseries)
Wild rice with mushrooms and fennel and other herbs and spices.
Sweet potatoes - lots of butter
Crispy Brussels sprouts with roasted shallots.
Homemade sourdough bread.
Apple walnut pie with caramel.
Meh. We have the same basics every year -— turkey, stuffing, ham, mashed potatoes and gravy, mac and cheese, corn pudding, rolls, broccoli and cheese sauce, pie and cake. Then whatever extra anyone wants to bring.
Then at Christmas we make all kinds of finger foods, and anything else out of the ordinary. My SIL is Filipina, so I always try to make Asian type stuff. This year, I’m thinking of making pig tails; a store not to far from us has them on hand most of the time. I’ve got a pork belly in the freezer I may make, too. I’ll probably stir fry some veggies when I get to their house.
I’m getting hungry...
I am weird. I like my Turkey overcooked and dry. (The crispy skin! yum! LoL)
No milk or cream in mashed potatoes. Just huge Idaho potatoes, butter (or fake vegan butter) and sea salt.
Canned processed cranberry sauce from Ocean Spray that you slice - nothing fresh or homemade.
Corn bread stuffing from the box with nothing added but parsley, sage, and celery. Okay an egg, some butter is fine but that’s it.
My palette is extremely sophisticated as you can see.
We actually like turkey, especially the leftovers for sandwiches; but we’re only two people this year, so we got a turkey breast. I want to try it either in the Instant Pot pressure cooker, or in a slow cooker.
Does anyone have experience with that?
I like cranberry sauce, but I’ve discovered Lingonberry preserves, and we’re having that now.
My ex mother in law made stuffing from scratch, and she always put a little bit of green pepper in it; not enough to actually taste the pepper, but it gave it a more complex flavor. She was a good cook.
My husband’s grandfather was an Army cook during WWII; and he made the best bread stuffing I’ve ever had.
Little tip – use the handle of a wooden spoon to separate the skin from the turkey so you can add butter under the skin. (and let it rest at least 40 minutes before carving – enough time to get the sides done)
Last year I added an easy fruit fluff salad. Most people are familar with the one made with instant pistachio pudding, crushed pineapple (or fruit cocktail) and Cool Whip. So last year, I used instant lemon pudding, fruit cocktail, and Cool Whip. Someone commented on it looking like potato salad.
My daughter-in-law served up a good helping to the younger granddaughter, who was 7. Her mom kept telling her to try it, and finally she whispered something about not liking potato salad.
So this year, we’re having it again, now called “Nora’s special recipe potato salad”. :)
We are having our gathering on Sunday, there will be 10. I am cooking 20 lb turkey, homemade stuffing, mashed potatoes & gravy, green bean casserole, corn, mashed sweet potatoes, gelatin (canned) and whole berry (home made) cranberry sauces, the lemon pudding fruit salad, and dinner rolls. The kids are bringing pies.
Yum.
NOT that slimy green bean casserole. 🤮
We’ve discovered that here in the south, dressing is generally cornbread. We prefer bread stuffing.
Never done TBird in pressure cooker but I would recommend using whatever herbs/spices You like and at least a quart of chicken stock/broth. Per Instapot guidelines lset the time for 46 minutes (about 6 minutes per pound of turkey). If You want crispy skin then preheat the oven to like 450°F pat the skin dry with a rag or paper towels, smear with Butter all over and pop da-bird in and watch closely for it to brown up. Maybe 15 minutes or so ?~ You could also use a Propane Torch to brown the skin.

I like both kinds. My mom always made cornbread dressing, my ex mother in law always made bread dressing. I use boxed stuffing, but I add extra water, because I don’t like dry stuffing. Sometimes I add a little green pepper to the bread stuffing.
