Hum. Correct to “see the town lights in the distance at night..”
We had a very dry year, so apple harvest is down, but that’s OK. I have plenty of applesauce and butter in the pantry from the past two seasons.
Mom is coming out today so we’ll pick the remaining apples and divvy them up between us. I need to make pie filling and she wants to make more applesauce. Just one tree produced well this season, despite the weather. It’s ‘Liberty’ and is a sprayless apple with great insect and disease resistance. I have a second younger one coming up behind, so since our Honeycrisp have amounted to SQUAT, the Liberty will fill in for those.

Oy, I have so much to do and Tuesday I sprained my ankle combined with tendonitis in the ankle. Been in a walker since then. It happened early Tuesday we were down in the garden pulling pepper plants and I stepped in some very loose tilled soil with my right foot and the left foot got hung up in some long grass. At least I did not fall. It’s a pisser! Ice and rest are helping. Getting a flexible removable ankle support this morning.
Well, that stinks! Take it easy and heal up fast!
Maybe this will cheer you up? I’m enjoying the last of the Sabre tomatoes. Had one cut up on my salad with supper last night. I can see why your husband wants you to just grow them for fresh eating - DELICIOUS!
Ahhh, ankle injuries! I had a broken ankle years ago which required surgery. My heart goes out to you! Do everything the doc says so it can heal as fast as possible. I’ll keep you in my prayers. Every little bit helps.
Pizza Pinwheels
Appetizer (or midnight snack).....great way to feed a crowd. Tastes just like pizza, but w/ a "twist."
Ing tube of Pillsbury crescent rolls 3 tbl pizza sauce pkg Hormel pizza pepperoni 8 slices mozzarella
Instructions Roll out crescent rolls; pinch seams securely (or, purchase crescent roll sheet if available). Press out to measure 12x15". Spread pizza sauce over, leaving a ¼" edge of dough. Layer on pepperoni singly so slices are touching. Layer on sliced cheese.
Starting from long side, rollup as tightly as possible; pinch the free edge seam. W/ serrated knife, cut 12 slices w/ sawing motion and don’t press too hard. Bake in sprayed 9x13" baking dish 375 deg 20–25 min til golden and baked through, cheese is melted. Tip: micro pepperoni 15 sec to melt fat before adding.
Goat Cheese with Honey, Fig Jam & Pistachios / did you say figs?
Easy appetizer--four simple exquisite ingredients. It really doesn't get any easier than this.
Transform a simple log of Goat Cheese into an impressive appetizer in less than 5 minutes.
Ingredients Goat Cheese Log, chp Pistachios, Honey, Fig Jam or Fig Spread
How to: Roll goat cheese log in chp pistachios; coat top/sides. Plate.
Drizzle with honey. Micro fig jam 10-15 sec. Drizzle over goat cheese.
A few years ago, my husband was let go on the Wednesday before Thanksgiving, without notice. His boss hated him, because he was a great worker, knew where the bodies were buried, and they wanted to replace an aging worker with a younger one who wouldn’t cost so much.
We were shaken but really, we knew God had our back, and that good things surely lay in front of us.
We cut back in expenses, and husband did contract jobs until he got an offer for full-time, with a good company. After he got his new job, they wanted him to build a team of people to help with solutions. He picked off four people from the old company right away. Hit the ground running. We are in a much better place now.
Bottom line:
Don’t tell God how big your storm is, tell the storm how big your God is!

Thanks for posting your photos. The gardening part is great to see, but I really enjoyed the pictures of your daughter’s kitty. Reminds me of my feisty fella, Crick, that had an aggressive cancer, and we had to put him down in June. Our life hasn’t been the same since. Give that one a hug and a scratch under the chin and ears from me! Miss our little guy, but it’s good to see one who looks so much like him.

We didn’t panic, number one. We KNEW God had our well being under control. That was pretty key, I think.
After that we came up with a plan, and worked the plan.
Every day we find AT LEAST one thing to be grateful for, because there is always, always, always something to be grateful for!

Memorable.
Nothing so glamorous as going on to build a team will happen in my case. I’m just an old blue collar guy but all those creative type jobs in rural places are spoken for by relatives so my only option is low skilled production in one of the factories around here.
Hubbell is looking for 2nd shift production and the factories here will hire most anyone, especially for 2nd, 3rd shift so that’s probably where I’ll end up.

Well, money coming in beats no money coming in hands down. Don’t put yourself down. When you’re an “old” guy, I’ll tell you, you have a wealth of knowledge that the younguns don’t have a clue about. Go get one of those shift jobs to start, but keep your eyes and especially your ears open.
People want to help. We found that sometimes it wasn’t even what you know, but who you know where we got the best leads. Former coworkers knew someone who knew someone who needed quick help. Follow those leads. Use your Rolodex. Tell people you are looking for work. There’s no shame in that. You’ll get back on your feet before you know it. Keep your chin up. You’ll get there!
I saw that on a sign at a vacation condo we stayed at, and snapped a photo of it so I could look for it. We didn’t have any idea we would use that as motivation a month later. It has stuck with us ever since.
Yes they are the best. I put our last 3 in the fridge in a plastic bag for a couple of days. Glad I have a lot dehydrated.
