cute tomatoes!!!

That’s one thing I have too much of. Just made another batch of Pico de gallo.

Does anyone have a suggestion for other uses for fresh tomatoes?

I already have a bunch of canned from last year. Plus I’m out of jars. LOL

August already - unbelievable. Thanks for the thread!

Suggestions needed: mama deer (accompanied by fawn) has eaten all the leaves off the rose bushes planted around the patio wall. The rose bushes are old & not that pretty, even when blooming. I would like to replace them with something else that would look decent at least 3 seasons of the year. Something that blooms would be nice, but not necessary.

The planting area is not full sun & in the afternoon, most is in a light shade. We had such good luck with the boxwoods I planted at the other house, I am tempted to plant them around the patio & for color, have very large pots on wheels that can be moved around. The pots can be planted with flowers that bloom in the spring & probably replanted with something that would bloom most of the summer & then again with fall flowers.

Any other ideas? Shrubs other than boxwoods that would stay green?

Oh, I also canned my first batch of tomatoes.

It was stewed tomatoes, not sauce until more come in.

Thanks for the pings. I know I have not posted much (lots of bikes to fix), but it has been a good summer for tomatoes in answer to prayer, praise God, and growing, with timely rains, and I think using more lime, and some Tomato Tone fertilizer plus a vitamin (expired) concoction helping, and overall more spacing. I have not seen the yearly Septoria or whatever it is called.

Began seedlings and planting about 2 weeks late, and over 90F temps held back some fruit set, so now I am just getting the first rip ones. Plus butternut and acorn squash are growing. Thanks be to the God of Heaven.

Grilled Eggplant Lasagna / Fresh Tomato Sauce

Ing 1 large eggplant 1/4 cup evo 6 oz grated Parm S/p

Pesto Sauce 1/2 cup evo 2 bunches fresh basil 3 gar/cloves 1/2 c pine nuts 6 tbl grated Parm S/p

Fresh Tomato Sauce 2 tbl evo 3 chp gar/cloves 2-3 large ripe tomatoes S/p, Chp fresh basil, to taste

Steps Brush long, thin strips eggplant w/ evo, s/p. Grill over hot coals, 3-4 min per side. Reserve.

Pesto Processor/fine-chp a min evo, basil, garlic, pine nuts, Parm, s/p. Set aside.

Fresh Tomato Sauce Heat evo on med. Sauté garlic a min. Core tomatoes and proc/puree; add to pan and cook over med 30-40 min. Add s/p and fresh basil to taste.

Layer in greased 13x9" pan grilled eggplant, thin layer of tomato sauce, thin layer of pesto. Repeat 3 or 4 times using up ing. Add Parm, rest tomato sauce, s/p to taste. Foil tightly. Bake 375 deg about 40 min.

NOTE For meat lovers, add a layer of seasoned, sauteed chp beef. Top w/ mozzarella.

Thanks for the ping. Tomatoes are ripening, and overall healthier than in the last few years, which I think is due to more spacing and some lime, and Tomato-tone, besides prayer, plus timely rain, praise God. Squash is doing its thing, but I had to pull vines off the neighbors bushes after just one of his sons moved back, though the rest of the family had no objections, and his parents like the squash they get. But we prayed for this son and his attitude has been better.

Smart! That is one of the first ‘red’ lettuces I ever grew - and I fell in love! We sold it at Seed Savers and I would sell it to any customer that would listen. ;)

I’ve let lettuces go in other years and ended up with an entire flat of seedlings started right in my garden beds - and then I dug them up and moved them to one central location. I love ‘free’ food! :)

And now I’m hungry for a salad for supper! :)

Thanks for ping. Garden continues to do well overall, with the yearly Septoria (?) wilt showing up later and on fewer plants than before, though most Butternut squash has powdery mildew, unlike the Acorn squash which is healthier, and sprawling.

Apple tree has some sort of disease though, which I have not research. This has been a busy summer fixing bikes (free, parts at cost), etc., by the grace of God, thanks be to Him.

And for Loli, the community cat, mother of 5 litters whose residence is across the street, 2nd flr. but who does not like to go home and be with the other well-fed cats, and thus she usually gets fed on our porch. And loves to catch mice, and sometimes rats. Yes, this nice cat is a Predator. She eats part of her catch. Which thus benefits the densely populated community. Thank God.
