We made it to August! Yay! Little rain by me, but we are still way ahead on the water table, so no fear of my well going dry. They keep promising rain, and it keeps missing us. The crops are all looking outstanding this season; getting ready for the THIRD cutting of Alfalfa.
That said, I am finally getting tomatoes and Mom & I made the first batch of V-8 Juice, yesterday. She’s a good veggie chopper, LOL!
This is the recipe I started with, but I add additional horseradish (prepared). While this is geared for using an actual JUICER, I just cook all the ingredients together in my heavy pot, and when everything is soft, (30-40 minutes) put it through my Foley Food Mill. I have also found that if I spin the softened veggies in my food processor for a bit, it makes milling them easier and I get a lot more liquid out of the veggies. If you are using a blender to do this make SURE that the veggies have cooled or you’ll blow the top off your blender! Safety First!
This recipe is easily doubled, tripled, etc. My usual ‘batch’ makes about 6 quarts of juice at a time.
