I always thought it was thickened with corn starch. Duh.
Canned creamed corn may just contain that and IMO is nasty. Fresh made off-the-cob creamed corn is rocking.
Unh, late in the harvest season, the ears of sweet corn used in making canned corn get infested with larva of a kind of insect that lays its eggs in the silks of the immature ear. As these larva begin to hatch, the harvest is switched from making the simple kernels in a light brine as canned corn, and the cream mix is added to the batches to be canned. Then the larva are not so noticeable, and in fact, get cooked like everything else.

I have a delicious recipe (Craig Claiborne) for jalapeno corn bread that calls for creamed corn. Now, I’m re-thinking the recipe because ... larvae.
I remember as a kid whenever we had some type of food drive the poor people got cans of creamed corn my parents accidentally bought instead of regular corn. It might be edible as an ingredient in some larger dish, but it was nasty, inedible slop by itself. I have no idea how they accidentally bought it so often. Could they not see the warning on the label: “Creamed”?

LIBBY’S right off the label: corn, water, sugar, modified corn starch, sea salt.
Corn Bake:
1/4 cup flour
16 oz. can cream style corn
16 oz. can whole kernel corn, drained
1 - 3 oz. pkg. cream cheese, cubed
1/2 tsp. onion salt
2 oz. swiss cheese
1/2 cup soft bread crumbs
3 tbs. butter
Mix all ingredients well. pour into 9 x 13" dish. Bake uncovered for 30 minutes at 400 degrees. You can make this the day before and refrigerate, until ready to use.
Optional: Let set out for 30 minutes before serving.
