The mice that previously resided in my house skipped everything in the pantry and went whole hog on the salted sunflower seeds every time (in shell).
That's what I bait my traps with great success.

There are so many mouse trap videos on you tube. Great entertainment. A more important issue is trying to find out how they are getting in.

I know many people swear by peanut butter for mouse traps, but I seen mice lick it right off without springing the trap. I’m old school, smashing a bit of sharp cheddar on the bait piece.

It sounds like you have it under control, how did they get in though?

Empty aerosol can with a rod driven through top to bottom suspended across the top of a 5 gallon bucket with a few inches of water in it and a ramp up to the can. Smear some peanut butter on the can.

Peanut butter in the trap...
Except for one in my study who runs back and forth on occasion...
He doesn’t bother me... I don’t bother him...
The wife is a prolific mouse trapper...

20 victor spring traps for $10 Amazon.
I use peanut butter but, if the traps are being robbed, raw bacon sticks on the trigger better.
Adjust the trigger by bending to give it a hair trigger.
I am amazed at how they can rob traps like they do.

We actually got one of these sonic devices for getting rid of mice and other pests, takes a few weeks to work but it did work and it’s been years now without them being back.

Any kind of trap and peanut butter.
Live trap or other,
They can't resist peanut butter.

Living in the country means mice.
These Tomcat mouse traps baited with PB work great for me.

They're advertised as "disposible", but I've been reusing them for years. Stick em in the dishwasher if they're gross.

Fill the 5-gallon bucket halfway with water, and check in the morning. Enjoy!

Real butter works much better than peanut butter, remember mice are mammals.

Cat. Not a cute fluffy Persian with breathing problems but an American short-hair.
We live in the country too in an older farm house and have two inside and two barn cats.
