Right out of the chute Dr. Berry is mostly wrong about bacon being “cured in salt”. The vast majority is pork belly cured in salt AND sucrose. Sucrose is bad for you because it is half fructose. Instead eat pork belly, and you won’t have to worry about fructose.
One of my mother’s degrees was in nutrition. She had graduated in the 1930’s. One day she quoted chapter and verse on what the government had said about various foods, quoting dates when they’d said it. Bacon good, bacon bad, eggs good, eggs bad, butter good, butter deadly, etc. Her point was you could find published papers from “reputable” scientists claiming the exact opposite for everything we ate. She said, “If it’s food eat it. Just don’t overdo it on anything. It’s getting fat, not exercising and not washing your hands that’s bad for you. Anything else, just use moderation and you’ll be about as well off as anything else.” Remember, there was a time when scientists thought radiation was good for you. Radium was added to everything from toothpaste to soap.
Enjoy bacon...you cook most of the fat off...and it’s about 15 calories per slice...so 6 slices of bacon...and use only one slice of bread....for dunking into the yolks...no butter needed.
I read an article a while back about a lady in Indiana I think it was, who was the oldest living person in that state and they asked her what she thought the secret to her longevity was and she said something to the effect: “Well, I eat bacon every day and at night I have two good shots of some good vodka”. I thought, you go lady, maybe I’ll try that diet.

It’s supposed to be the nitrites in bacon turning into nitrosamines in your body that is the biggest risk. I don’t care I’m eating it anyway. Forgot to buy some this morning when I went shopping and that sucks because I was planning on making some BLT’s and crumbling some in my Welsh rarebit. Got all the other ingredients for them but forgot the most important one.
If you see “study” results that worry you....well, don’t worry ‘cause there will be another study to contradict it.

If I want truth, I look to the Bible. God has declared the unclean animals (scavengers) to be unfit for the temple of God (which your body is). Your argument is with God. “Nutrition experts” are the ones that have been pushing garbage food in the U.S. which has resulted in 70% of us being fat. Being fat is what’s killing us. Eating too much of anything will make you fat, but generally sugar and processed carbs are what’s making us fat, not bacon.
