In new research, geneticists from Yunnan Agricultural University and elsewhere analyzed genetic data from 3,525 cultivated and wild grape varieties from around the world.

According to the Bible Noah was 600 years old before the flood. After the flood he planted a vineyard, drank the wine and got drunk. So he had never drunk wine before the flood and didn’t know what would happen if he drank too much?

There was a long interval between when Adam and Eve left the Garden of Eden and when Noah came on the scene.
The Bible doesn't say. My guess is that Noah knew exactly what he was doing.
Drinking wine in moderation is not a sin. Jesus was accused of being a winebibber Matthew 11:18-19. And Paul recommended wine for digestion.
I understand that wine today probably has a higher alcohol content. But wine in Jesus' day was considered a safe drink relative to water because of the alcohol.
