NATIONAL BEAN DAY

Green, red, kidney, lima, or soy are just a few of the different kinds of beans recognized on National Bean Day on January 6th.

This day celebrates the bean in all sizes, shapes, and colors. We’ve been cultivating beans (legumes) since the early seventh millennium BC. And today, just as throughout the Old and New World history, beans provide a significant source of protein. Not only are beans an exceptionally healthy meal and snack choice, but they supply an excellent source of fiber. They are low in fat and are high in complex carbohydrates, folate, and iron, too.

In one cup of cooked beans, supplies between 9 and 13 grams of fiber. Soluble fiber can help in lowering blood cholesterol.

There are approximately 40,000 bean varieties in the world.

Only a fraction of these varieties is mass-produced for regular consumption.

During the gas shortages in the 70’s my dad went out and bought a motorhome. At one truck stop we bought a bumper sticker for it that read “Eat more beans, we need the gas”.

How dare can National Bean Day take away from the solemn anniversary of the event that all Americans regard as worse than 9/11?

I got an award for this, give it a try on some cold winter day.
Here’s my Spicy Navy Bean recipe:
I scrub, rinse several times, and then soak 2 cups navy beans with fresh water overnight.
In the crockpot with water 1 1/2” over beans for 5 1/2 hours on high:
1.0 ounce of vegetable oil max (heart healthy!) Sunflower/Omega mix, no Soybean!
2 or 3 small okra (sliced up)
3 small green onions (sliced up)
7 or 8 small dried whole red pepper pods (Hot) Cayenne or a teaspoon of red pepper flakes if you don’t have any
1/4 teaspoon Mexican chili powder (just for the beautiful golden color)
3/4 to 1 teaspoon seasoning salt and 1/4 teaspoon pepper (add at the last 2 hours only!)
After in the bowl I give it a couple twist of a McCormick Peppercorn Medley Grinder and serve with a hard loaf style bread

Smokey Joe's Cafe--The Robins (1955)

I have eaten several times at Smokey Joe's cafe, which, sadly, is no longer around. But I don't think I ordered beans, as did the Robins, and I got far better customer service than they did.
