Looking around the fridge for something to eat, and noticed some sliced provolone and sliced sourdough that I bought on sale, said what the heck.
Put a slice of the bread doused with regular olive oil on one side, not extra virgin, in the broiler for about 6 minutes, took it out and added a slice of provolone, and nuked for 35 seconds.
Waited for 15 seconds to cool, folded it up and it was the gooiest cheese sandwich ever.

I like swiss cheese on my grilled cheese sandwiches. With bacon, olive oil and a couple tomato slices but only if tomato is in season and it’s garden fresh.
My favorite cheese for grilled cheese is good old Government Cheese. Not kidding.
Provolone is top notch! Add a slice of ham and it’s Heaven!

The #1 best (if you disagree, you are exercising your right to be wrong) cheese for grilled cheese sandwiches is Extra Sharp Cheddar.
BUT - I often enjoy a multi-cheese creation - using a few varieties, but always include a sharp cheddar. Gouda works well, as do several others.

When I worked as a nurse my patient was Martine Bartlett she played Miss Metcalf in Splendor in the grass.
I really liked her and she told me she made grilled cheese with brie.

Boar’s Head American cheese becomes super delicious when melted. Butter inside and outside the bread makes the sandwich as long as it’s cooked to golden perfection.
White Cheddar
A lot of food snobs may turn their noses up at American cheese and white bread, but they make a hell of a grilled cheese sandwich.

I worked for an institution on my first real job. Govt cheese, govt butter, white bread. On midwatch we’d pull them out of the fridge and make the best grilled cheese sandwiches.
My big brother was a tightwad. He’d get food behind grocery stores when they used to throw out everything that passed their fresh dates. He also had a fridge stocked with govt cheeses and butter. Said they gave them away at the parks all the time.
Extra Sharp Cheddar. On Orowheat Honey Wheat Berry. With Campbell’s Tomato Soup. On a cold winter day. Had a girlfriend from a foreign land at one time. Made this for lunch. She pronounced it “The best thing I have ever eaten.”
Gruyere or Swiss. And of course 🍅 tomato soup.
