To: Repeal The 17th

My husband is very ‘Keto’, but he seems to have tired of the all-meat chili we’ve been making with Wick Fowler mix. I’m not always Keto, and I’ve been wanting to make a bean Chili. Do you have a good recipe?

Just me, but I’d take the recipe you’re comfortable with and add some water and beans (canned chili beans) near the end of the cooking process.

Don’t want to turn this into a chili thread, but I prefer to use dried pinto beans (never kidney beans, and never any kind of canned beans), beef or venison diced to about 1/4” and browned, some tomato sauce (no chunks of tomato for me), and season it as you prefer. I use several different types of chiles until it tastes like what I want. Simmer it for a few hours at least, or use a crockpot.

My mother was from Iowa, and made the very worst chili I have ever been forced to eat. Canned kidney beans, big slimy hunks of stewed tomato, almost without spices, it was truly horrible. I learned to make chili the way I like it as soon as I moved out.

I also make a nice veggie chili. We use Quorn soyless meat grounds sometimes in place of ground beef (one daughter can’t have lots of stuff, so this is how we meet her protein needs when she visits). I dice up eggplant (skin removed), zucchini, yellow squash, onions, and diced tomatoes, oh, and chili beans. I use Carroll Shelby’s chili mix. It’s a game changer for that comfort food feeling without weighing you down. Top with shredded cheddar or Colby Jack, and corn bread on the side. Always get compliments whenever and wherever it’s served. Nobody knows there’s no meat in it. Tastes like it does!

I use the same trick for chili as I do for spaghetti sauce -— I use canned stewed tomatoes, pureeded If you like, instead of cutting up onions and peppers.

1 lb lean ground beef
1 15 oz can stewed tomatoes
Half a small can tomato paste (I freeze the other half)
1-2 cans kidney beans, drained and rinsed
1/2 teaspoon granulated garlic
2 tablespoons Williams unsalted chili mix (it’s really potent; I never use anything close to a whole envelope)
Salt to taste
1/2 teaspoon cumin
A dash of ground red pepper
Water

Brown the ground beef. Drain if too greasy.
Add the spices and salt, and cook for a few seconds to bloom them.
Add in the stewed tomatoes and the beans, and enough water to make the consistency the way you like it.

And here’s a thought on the keto chili -— has anybody ever used canned boiled peanuts, instead of beans? I’ve never
tasted them, but I’m wondering how they’d be.

I made a black bean chili that is really good - a bit different. Purists will object lol.

Finally chop a medium sized onion and saute until slightly browned. Add
either a pound of ground beef and a little water, cook and stir until brown

OR add a large cooked chicken breast which has been shredded.

Add two cans of black beans which have been rinsed and drained, one small can of finely diced tomatoes with green chili’s (Rotel) and one can of finely diced tomatoes. Add
chili mix to taste - usually about one envelope - and heat through. If too thick add a little water.

Top each bowl with sour cream and shredded cheese.
