Austin Crawfish Festival 'fails spectacularly', attendees leave angry, hungry

When his fiancée bought him VIP tickets, Pablo Gallaga expected to spend Sunday, March 6 stuffing himself at the Austin Crawfish Festival. Held at Carson Creek Ranch, the festival was making its return after a two-year hiatus. VIP tickets included all-you-can-eat crawfish and entry into the festival an hour early.

The part about them cooking 13,000 pounds the day before makes me think this is just a case of idiots underestimating how seriously some people take an “all you can eat crawfish” promise.

Well, the way the “pros” do it is pinch the head off, then suck all the insides out through the hole that makes. Of course in Louisiana they have 500 different recipes to cook crawfish, so you can get “crawfish eggrolls”, or whatever suits you.

Basically you twist off the head and then suck the juice (water used in the boil) out of the head while also crushing it. This releases more juice and also allows the seasoning, which is usually spicy, to get on your lips and mouth. Then, with the tail in hand I peal off two segments of the tail exposing a bit of the meat. You then take the tail between your thumb and forefinger and squeeze from the bottom up while sucking the meat out.
