If you look at the eyes of Indians that are strict vegetarians their eyes look too deep in their skull and the tissue around them always seem bruised and puffy. The children of Indians raised in the United States seem to have different facial features probably due to a totally different diet during development.

You are what you eat.

The climatistas won’t like that one bit. The dreaded animal flatulence causes global warming AND the dreaded meat-eating people will live longer causing even more global warming. Could there be a worse outcome for the climate kooks?

When I was in school in the 60’s in Mississippi, we had fish (sticks) every Friday for lunch.

There wasn’t a Catholic church anywhere near our town for 30 miles or more.....................

I find that beef short rib meat sold boneless is usually just as good as top sirloin and much cheaper. I often use it to make excellent fajitas and burritos.

As it just happens, I'm sitting down with breakfast sausage as I write this. Bacon is often my first choice.

Almost every meal includes meat.

That is an interesting observation and one I’ve noticed with the many Indian people I’ve worked with here in California. I never thought about the differences you point out between immigrants and those born and raised in the USA and what might cause them.

I ditched wheat completely last October, and I’m blown away at the difference. If I have anything with even a little wheat in it, I know it shortly thereafter.

I think what’s amazing to me is how so many people go through life feeling bloated or inflamed and just accept it. Try purging your diet of wheat for a month and see how you feel. You may not want to go back after you feel how your body responds to it.

One purpose of this research is to assess changes in body proportion between Maya growing up in the US and Maya growing up in Guatemala. Height and sitting height of 6–12-year-old boys and girls (n=360) were measured and the sitting height ratio [sitting height/height]×100, a measure of proportion, was calculated. These data are compared with a sample of Maya of the same ages living in Guatemala and measured in 1998 (n=1297). Maya-American children are currently 10.24 cm taller, on average, and have a significantly lower sitting height ratio, (i.e. relatively longer legs, averaging 7.02 cm longer) than the Guatemala Maya. Maya-American children have body proportions more like those of white children in the US than like Maya children in Guatemala. Improvements in the environment for growth, in terms of nutrition and health, seem to explain both the trends in greater stature and relatively longer legs for the Maya-Americans.

I had a good friend that convinced me to go Vegetarian. So, I did for a number of years.

When I started eating meat again, it took a number of tries before my body could process it, so to speak. Man, I got really sick a couple of times!

But, I’m a fully recovered carnivore once again.

Note to self: Always ignore advice from Kellie, LOL!

I like beef and have found beef shank is very affordable and delicious when slow cooked.

I braise them like short ribs but they are about half the price.

I roast them on a sheet pan at 425F for 15-20 minutes each side, then transfer them and the drippings to a baking dish and cover with stock, then back in the oven for three hours at 300.

When done, I remove the bones, then let everything solidify in the fridge. To serve, I scoop out a portion and cube up the meat, fat, and the gelatin. I put that into a large cup, add water, then heat in the microwave.
